- 1 pound ground lamb
- 3 quarter-size slices ginger
- 2 large cloves garlic or 4 small
- 2 medium shallots
- Zest of 1 lemon, and separately, its juice
- 4 sprigs fresh mint
- Handful fresh cilantro
- 3/4 teaspoon kosher salt
- 4 tablespoons pomegranate molasses
- 1/2 teaspoon baking soda
- 1/4 teaspoon garam masala, optional
- Lots of freshly ground pepper
- Oil, for drizzling
- 1 cup plain yogurt
- 2 tablespoons minced fresh mint
- 1 large English cucumber, grated
- 1 clove garlic, minced

Asian Cucumber Salad

Slowly Braised Lamb Shanks

Preheat the oven to 350°F/180°C
- Six 1-pound lamb shanks
- Salt and freshly ground black pepper
- 1/2 cup all purpose flour
- 1 teaspoon paprika
- 1/4 teaspoon cayenne pepper
- 5 tablespoons light olive oil
- 1 head garlic, halved crosswise
- 1 onion, roughly chopped
- 3 celery stalks, 2 roughly chopped and 1 finely diced
- 3 carrots, peeled, 2 roughly chopped and 1 finely diced
- 2 sprigs fresh thyme
- 2 sprigs fresh rosemary
- 2 bay leaves
- One 14.5-ounce can diced tomatoes
- 1 1/3 cups dry red wine
- 8 cups lamb stock or beef stock
Tomato Sauce from the pantry

Set a large strainer over a 4-quart saucepan and pour in tomatoes, letting the juice run into the saucepan
- 2 28oz cans of whole peeled tomatoes
- 1/4 cup sherry vinegar
- 1/2 cup white wine (Pinot Grigio or Sav Blanc)
- 2 tbsp sugar
- 1 tsp red pepper flakes
- 1 tsp dried oregano
- 1 tsp dried basil
- 1 carrot (peeled and diced)
- 1 med onion (diced)
- 1 rib celery (diced)
- 4 tbsp olive oil (not extra virgin)
- 4 cloves garlic (smashed)
- 3 ounces capers (rinsed and drained)
- salt and pepper to taste
Meatballs - Indian Style

To make meatballs; combine all ingredients
- Meatballs:
- 1 lb minced lamb
- 1/2 tsp salt
- 1 tsp cumin
- 1 tsp coriander
- 1/4 tsp garam masala
- 1/8 tsp cayenne pepper
- 2 tbsp finely chopped cilantro
- 2 tbsp plain yogurt
- Sauce:
- 5 garlic cloves, peeled
- 1 -in cube ginger, peeled and coarsely chopped
- 10 fl oz water
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1 tsp paprika
- 1/4 tsp cayenne
- 5 tbsp veg oil
- 1 -in cinnamon stick
- 6 cardamom pods
- 6 cloves
- 100 g (4oz) onion, peeled and finely chopped
- 100 g (4oz) tomatoes, peeled and chopped
- 4 tbsp plain yogurt
- 1/2 tsp salt
