Cinnamon-Sugar Popcorn

Directions 1.Preheat an oven to 250 degrees F (120 degrees C)
- 1 cup unpopped popcorn (You may use 2 bags of microwave popcorn)
- 1/2 cup butter

- Ingredients:
- 150 g / 6 oz plain flour
- Pinch of salt
- 75 g /3oz butter or an equal mix of butter and lard, cubed
- 2 - 3 tbsp cold water
- 3 large eggs, plus 2 large egg yolks, lightly beaten
- 55 g / 2 oz caster sugar
- 570 m1 / 1 pint single / light cream
- 1/4 teaspoon vanilla extract (optional)
- 1/2 teaspoon whole nutmeg, freshly grated
Mediterranean Farro Salad

In a medium saucepan, combine 4 cups of water with the farro
- 10 ounces farro (about 1 1/2 cups)
- 1 1/2 teaspoons kosher salt, plus 1/2 teaspoon
- 8 ounces green beans, cut into 1 to 2-inch pieces (about 2 cups)
- 1/2 cup pitted black olives
- 1 medium red pepper, cut into thin strips (about 4 ounces or 1 cup)
- 3 ounces Parmesan, crumbled (about 3/4 cup)
- 1 small bunch chives, snipped (about 1/4 cup)
- 1/4 cup sherry vinegar
- 1/4 cup extra-virgin olive oil
- 1 tablespoon Dijon mustard
- 1 teaspoon freshly ground black pepper
Balsamic-Glazed Beets

In a large saucepan cover beets with salted water by 1 inch
- 3 1/2 pounds beets (4 pounds with green attached, reserving greens for another use), scrubbed and trimmed, leaving about 1 inch of stems attached
- 3 tablespoons balsamic vinegar (I use fig balsamic)
- 2 tablespoons pure maple syrup, molasses or honey
- 2 tablespoons fig preserves
- 1 tablespoon olive oil
- 1 1/2 teaspoons minced fresh thyme leaves

- 1 pound dried red beans, rinsed and sorted over
- 3 tablespoons bacon grease
- 4 slices of bacon chopped
- 1 1/2 cups chopped yellow onions
- 3/4 cup chopped carrot
- 3/4 cup chopped red bell peppers
- 1/2 teaspoon salt
- 1/2 teaspoon freshly ground black pepper
- 3 bay leaves
- 2 tablespoons chopped fresh parsley
- 2 teaspoons fresh thyme
- 1/2 pound smoked sausage, split in half lengthwise and cut into 1-inch pieces
- 1 pound smoked ham hocks

- 10 cups chicken stock, or water

- 1 cup brown sugar
- 1 cup white sugar plus 3 tablespoons reserved for topping

- 2 cups flour

- 1 cup milk
- 2 to 3 apples, peeled, cored, chopped to measure 3 cups
- 1-1/2 cups toasted, chopped walnuts,½ cup reserved for topping
- 4 ounces(2/3 cup) SCHARFFEN BERGER 62% Cacao Semisweet Chocolate, chopped

Mascarpone Chocolate Toffee Bars

Position an oven rack in the middle of the oven
- Vegetable cooking spray
- 1 pound refrigerated sugar cookie dough (recommended: Pillsbury)
- 2 (1.4-ounces) chocolate-toffee candy bars, coarsely chopped, divided (recommended: Skor)
- 1/2 teaspoon pure vanilla extract
- 1 cup semisweet chocolate chips (recommended: Ghirardelli)
- 1 teaspoon vegetable oil
- 1 cup (8 ounces) mascarpone cheese, at room temperature
- 1/4 cup sliced almonds, toasted * see Note
- * Note: To toast almonds, arrange in a single layer on a baking sheet. Bake in a preheated 350 degrees F oven for 8 to 10 minutes until lightly browned.
- You can use Heath chips for the Toffee Bars
