Three-Cheese Potato Gratin

Directions Position a rack in the center of the oven and preheat to 400 degrees F
- Ingredients
- Butter, for greasing the baking dish
- 2 tablespoons extra-virgin olive oil
- 1 large onion, chopped
- 2 large cloves garlic, chopped
- 1/3 cup heavy whipping cream
- 1/4 cup low-sodium chicken broth
- 1 teaspoon minced fresh rosemary
- 1 teaspoon coarse kosher salt
- 3/4 teaspoon freshly ground black pepper
- 5 small Yukon gold potatoes, peeled, cut into 1/8-inch-thick rounds (about 1 1/4 pounds)
- 1 large yam (red skinned sweet potatoes), cut into 1/8-inch-to-1/4-inch-thick rounds
- 1 1/2 cups coarsely grated gruyere cheese (about 5 ounces)
- 1/2 cup coarsely grated Asiago cheese (about 1 1/2 ounces)
- 1/2 cup finely grated Pecorino Romano cheese (about 1 1/2 ounces)
- 2 tablespoons chopped fresh flat-leaf parsley, optional

- 1 large onion , chopped fine (about 1 1/2 cups)
- Table salt
- 2 medium garlic cloves , minced or pressed through garlic press (about 2 teaspoons)
- 7 cups water
- 1 ham steak (about 1 pound), skin removed, cut into quarters
- 3 slices thick-cut bacon (about 4 ounces) (see note)
- 1 pound green split peas (about 2 cups), picked through and rinsed
- 2 sprigs fresh thyme
- 2 bay leaves
- 2 medium carrots , peeled and cut into 1/2-inch pieces (about 1 cup)
- 1 medium celery rib , cut into 1/2-inch pieces (about 1 cup)
- Ground black pepper
Potato Gratin with Gruyere and Herbes de Provence

- 2 tablespoons olive oil
- 2/3 cup thinly sliced shallots
- 4 large garlic cloves, minced
- 1 cup canned chicken broth
- 1 cup dry white wine
- 2 teaspoons herbes de provence with lavender
- 1 1/4 cups heavy cream
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 2 pounds russet potatoes, peeled
- 12 ounces gruyere cheese
Pork Tenderloin Stuffed

Stuffing: Put the shallot, garlic and mushrooms in the bowl of a food processor
- Stuffing:
- 1 shallot, roughly chopped
- 1 garlic clove, roughly chopped
- 2 cups roughly chopped mushrooms
- 4 ounces fresh andouille or hot pork smoked sausage, finely chopped
- Salt and freshly ground black pepper
- 1 tablespoon olive oil
- Splash whiskey
- Bread cubes, dried out about 1/2 cup
- 2 tablespoons chopped curly parsley leaves
- Pork:
- 2 pork tenderloins
- 1 tablespoon Dijon mustard
- Oil, for grilling
- Salt and freshly ground black pepper
- Arrange a bit of grilled kale on center of each serving plate and top with 3 slices of pork medallions. Drizzle the beurre blanc over the medallions and around the rims of the plate.
