Cider-Braised Pork Chops

Do not use chops thinner than 1 inch
- 6 bone-in blade-cut pork chops , about 1 inch thick
- Salt and pepper
- 2 tablespoons vegetable oil
- 1 onion , chopped
- 3 garlic cloves , minced
- 2 tablespoons all-purpose flour
- 1/4 cup apple butter
- 1 cup apple cider
- 1 sprig fresh thyme
- 1 teaspoon cider vinegar
- 1 tablespoon finely chopped fresh parsley
Pumpkin Flan made with cream cheese

I find that this recipe works better if the custard is prepared and ready to go before the caramel is made
- 1 1/4 cups granulated sugar, divided
- 1/4 cup water
- 1 12-ounce can evaporated milk
- 1 14-ounce can sweetened condensed milk
- 6 ounces cream cheese, softened
- 1 cup pumpkin puree
- 5 eggs
- 1 tablespoon cornstarch
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground cloves
- 1/4 teaspoon ground ginger
- 2 teaspoons vanilla extract
- Boiling water
New England Cream Pie

Instructions 1. Mix flour, salt, and sugar in a food processor fitted with the steel blade

- For the Pie Shell
- 1 1/4 cups all-purpose flour
- 1/2 teaspoontable salt
- 1 tablespoon sugar
- 5 tablespoons unsalted butter, cold
- 3 tablespoons vegetable shortening, cold (Crisco)
- 3 –4 tablespoons ice water
- For the Filling
- 2 tablespoonsall-purpose flour
- 3/4 cup sugar
- 1 quart heavy cream, non-ultra pasteurized preferred
- 2 large eggs

Fresh Pesto Pasta

Combine the basil, pine nuts, garlic, and oil in a food processor and blend until a paste forms
- 4 cups (about 4 ounces) fresh basil leaves
- 1/3 cup toasted pine nuts
- 3 cloves garlic, peeled
- 1/2 cup extra-virgin olive oil
- 1/2 cup freshly grated Parmesan cheese
- 1/4 cup freshly grated Pecorino Sardo or Romano

Custard-Filled Cornbread

Preheat the oven to 350 degrees F
- 2 large eggs
- 3 tablespoons butter, melted
- 2 cups milk
- 2 tablespoons sugar
- 1 1/2 tablespoons white vinegar
- 1 teaspoon salt
- 1 cup all-purpose flour
- 3/4 cup yellow cornmeal
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 cup corn kernels (from about 2 ears of corn)
- 1 cup heavy cream
Cheese Fondue Hash Browns

Preheat the oven to 375 degrees F
- 2 tablespoons vegetable oil
- 2 tablespoons unsalted butter
- 2 large Idaho potatoes, washed, peeled and diced (about 1 1/2 to 2 inches thick)
- Pinch paprika
- Kosher salt and freshly ground black pepper
- 1 bunch green onions, halved and thinly sliced
- 1 leek halved, and thinly sliced (ramps can be substituted when in season)
- 1/2 cup white wine
- 1 small Camembert or Brie cheese, rind trimmed off

- 1/4 cup dried apricots, coarsely chopped
- 1/4 cup whole almonds toasted, coarsely chopped
- 1 cup couscous
- 1 1/2 cups chicken stock, warm
- 1/2 teaspoon lemon zest
- 2 scallions green parts only
- 1/4 cup fresh mint leaves, roughly chopped
- 1/2 bunch fresh cilantro leaves, roughly chopped plus leaves for garnish

Preheat oven to 350 degrees F (177 degrees C) and line two baking sheets with parchment paper
- Garnish:
- 1 cup (200 grams) granulated white sugar
- 4 large (120 grams) egg whites
- 1 1/2 teaspoons pure vanilla extract
- 3 tablespoons (30 grams) all-purpose flour
- 1 1/4 cups (125 grams) whole raw hazelnuts
- Confectioners (powdered or icing) sugar, sifted
- Note. Can replace the hazelnuts with 1 1/2 cups (270 grams) nougat milk chocolate bar (Toblerone), chopped. You will need almost 3 - 3.52 ounce (3 - 100 grams) Toblerone bars.
