Chocolate Chunk Ice Cream

Mix milk, cream, and sugar together in the saucepan
- 1 1/2 cups milk
- 1 1/2 cups heavy cream
- 1/2 cup sugar
- 1/2 to 3/4 cup chocolate chunks (pick your favorite SCHARFFEN BERGER flavor: 41% Milk Chocolate, 62% Cacao Semisweet or 70% Cacao Bittersweet)
Banana Streusel Bread

Preheat oven to 350 degrees F (180 degrees C) and place the rack in the center of the oven
- 2 cups (260 grams) all-purpose flour
- 1/2 cup (110 grams) light brown sugar
- 1 1/4 teaspoons baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup (100 grams) pecans, coarsely chopped
- 1 - 5.5 ounce (155 gram) package of Werther's Original Chewy Caramels, coarsely chopped
- 3 ripe large bananas, mashed
- 2 large eggs, lightly beaten
- 1/2 cup (113 grams) unsalted butter, melted and cooled
- 1/3 cup coffee flavored yogurt (can also use plain, vanilla, or caramel flavored yogurt)
- 1 teaspoon pure vanilla extract
Cranberry Nut Granola

It freezes beautifully, so I make a large batch and just pull it out when needed
- 1/3 cup pumpkin seeds
- 1/4 cup sunflower seeds
- Nonstick cooking spray
- 1/3 cup maple syrup
- 2/3 cup packed brown sugar
- 1/2 cup unsweetened cranberry juice
- 1 1/2 teaspoons ground cinnamon
- 2 cups old fashioned rolled oats
- 1/2 cup chopped roasted and salted almonds
- 1/2 cup chopped roasted peanuts
- 1/4 teaspoon fine sea salt
- 1 cup dried cranberries
RAVIOLI WITH Broccoli Rabe CREAM SAUCE

In a large pan, heat oil and butter
- 3 tbsp. olive oil
- 1 sm. onion, chopped
- 1 tbsp. flour
- 4 oz. chicken broth
- Salt and pepper
- 4 tbsp. grated Romano cheese
- 1 tbsp. butter
- 4 oz. diced wild mushrooms
- 2 bunches broccoli rabe, tough lower stems removed You may use turnip greens or mustard greens.
- 4 ounces diced bacon or sausage sliced
- 4 oz. heavy cream
- 4 oz. white wine
- Pinch of nutmeg
- Chopped parsley
- 1 pkg. ravioli
Habanero Fruit Sauce

You can mix this in butter and refridgerate
- 3 c. Habaneros, seeded and chopped
- 2 ripe mangos peeled and diced
- 1 ripe papaya peeled and dice
- 1 c. fresh pineapple peeled diced and packed
- 1 c. cider vinegar
- 1/2 c. rum (light or dark)
- 1/4 c. triple sec
- 1 c. fresh lime juice
- 2 c. sugar
- 1 t. salt
- 1 t. fresh ground black pepper
- 2 t. lime rind, grated
