Hot and Sour Soup

To make slicing the pork chop easier, freeze it for 15 minutes
- Ingredients
- 7 ounces extra-firm tofu, drained
- 4 tablespoonssoy sauce
- 1 teaspoon toasted sesame oil
- 3 tablespoons cornstarch, plus an additional 1 1/2 teaspoons
- 1 boneless, center-cut, pork loin chop (1/2 inch thick, about 6 ounces), trimmed of fat and cut into 1 inch by 1/8-inch matchsticks
- 3 tablespoons cold water, plus 1 additional teaspoon
- 1 large egg
- 6 cupslow-sodium chicken broth
- 1 cup bamboo shoots (from one 5-ounce can), sliced lengthwise into 1/8-inch-thick strips
- 4 ounces fresh shiitake mushrooms, stems removed, caps sliced 1/4 inch thick (about 1 cup)
- 5 tablespoons black Chinese vinegar or 1 tablespoon red wine vinegar plus 1 tablespoon balsamic vinegar (see note above)
- 2 teaspoons chili oil (see note above)
- 1 teaspoon ground white pepper
- 3 medium scallions, sliced thin
Veal Stuffed Jumbo Shells with Mushroom Bechamel

Set a large, 4 to 6-quart stockpot filled with water over high heat and bring to a boil
- STUFFED SHELLS:
- 24 jumbo shells, about 1/2 pound
- 1 tablespoons olive oil
- 1/2 cup finely chopped onion
- 2 teaspoons minced garlic
- 1 1/2 pounds ground veal
- 1/2 pound ground pork
- 2 teaspoons finely chopped marjoram leaves
- 1 1/2 teaspoons kosher salt
- 3/4 teaspoon ground black pepper
- 1/4 cup heavy cream
- 1 large egg
- MUSHROOM BECHAMEL:
- 4 tablespoons unsalted butter
- 1 pound button mushrooms, cleaned and thinly sliced
- 1 teaspoon fresh thyme leaves
- 1/2 cup small diced onion
- 2 teaspoons minced garlic
- 4 tablespoons all-purpose flour
- 3 cups whole milk
- 1/2 teaspoon salt
- 1/4 teaspoon fresh ground white pepper
- 1/8 teaspoon fresh grated nutmeg
- Freshly grated Parmesan

Plum Coffee Cake

Preheat oven to 400 degrees F (205 degrees C) and place rack in center of oven
- Garnish:
- 1 1/4 cups (175 grams) all purpose flour
- 1/4 cup (30 grams) ground almonds
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 1/2 cup (120 ml) flavorless oil (safflower, corn, or canola)
- 1/2 cup (120 ml) whole milk plain yogurt
- 1/4 cup (60 ml) orange juice
- 1 tablespoon orange zest (the outer orange skin (rind) of the orange)
- 1 large egg
- 1 teaspoon pure vanilla extract
- 1 cup (200 grams) granulated white sugar
- 7 - 8 Italian prune plums, halved and pitted (can also use 4 - 5 red plums)
- 2 tablespoons (30 grams) coarse brown sugar (I like to use Turbinado or Demerara sugar )

Cornbread with Corn

1. Adjust an oven rack to the middle position and heat the oven to 400 degrees
- 1 1/2 cups unbleached all-purpose flour
- 1 cup (about 5 ounces) Quaker yellow cornmeal
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 1 cup buttermilk
- 3/4 cup frozen corn kernels ,thawed in season char grilled corn cut off cob can be used.
- 1/4 cup packed light brown sugar packed
- 2 large eggs
- 1 stick (8 tablespoons) unsalted butter, melted and cooled slightly

Grilled Spicy Tequila Shrimp

- 4 ounces of good aged Anejo tequila
- Juice from 4 large limes
- Small bunch of cilantro well washed and chopped
- 6 T TOOC Habanero Olive Oil
- Zest from 2 oranges
- 2 minced jalapenos
- 1 T honey or agave nectar
- 3 lbs large shrimp –cleaned and deveined
- 2 sweet onion cut into large pieces
- Whole garlic cloves
- 3 oranges peeled and sectioned (approx.)
- 3 limes sectioned (approx.)
- Skewers for BBQ.
- Note: if using wooden skewers be sure to soak in water for at least one hour prior to grilling.
