Honey Brined Smoked Turkey

Combine the hot water and the salt in a 54-quart cooler
- 1 gallon hot water
- 1 pound kosher salt
- 2 quarts vegetable broth
- 1 pound honey
- 1 (7-pound) bag of ice
- 1 (15 to 20-pound) turkey, with giblets removed
- Vegetable oil, for rubbing turkey
Banana Pudding

1. ROAST BANANAS Adjust oven rack to upper-middle position and heat oven to 325 degrees
- PUDDING:
- 7 large bananas, slightly underripe
- 1 1/2 cups sugar
- 8 large egg yolks
- 6 tablespoons cornstarch
- 6 cups half-and-half
- 1/2 teaspoon salt
- 3 tablespoons unsalted butter
- 1 tablespoon vanilla extract
- 3 tablespoon lemon juice
- 1 (12-ounce) box vanilla wafers
- WHIPPED TOPPING:
- 1 cup heavy cream, chilled
- 1 tablespoon sugar
- 1/2 teaspoon vanilla extract
Chipotle Agave Chicken Wings

In a large bowl or baking dish, add all the ingredients for the wing marinade: buttermilk, garlic, chipotle chiles,...
- To make the marinade for the wings:
- 2 cups buttermilk
- 3 cloves garlic minced or pressed
- 2 chipotle chiles from chipotles chiles in adobo sauce seeded and minced
- 1 tablespoon sauce from chipotle chiles in adobo sauce
- 1/4 cup orange juice
- Zest of an orange
- 1 tablespoon kosher or coarse sea salt
- 1 teaspoon freshly ground black pepper
- 3 pounds chicken wings
- To make the chicken wing sauce:
- 4 tablespoons agave syrup or maple syrup
- 1 garlic clove minced
- 1 teaspoon Tabasco sauce
- 2 tablespoons sauce from chipotle chiles in adobo sauce
- 1 1/2 teaspoon apple cider vinegar
- 3 tablespoons olive oil
- 1/4 teaspoon kosher or coarse sea salt or to taste
- To make the dipping sauce:
- 1 cup Mexican crema crème fraiche or sour cream
- 1/2 cup crumbled queso fresco or a mild feta cheese
- 2 tablespoons freshly squeezed lime juice
- 2 tablespoons chopped cilantro leaves and upper parts of stems
- 2 tablespoons chopped chives
- kosher or coarse sea salt to taste
- freshly ground black pepper to taste
- Carrot and celery sticks to eat along with the wings and dip in the dipping sauce

- 8 large lemons, preferably Meyer
- 3 large eggs, separated
- 1/2 cup granulated sugar

- Confectioners' sugar, for dusting
- 3 tablespoons unsalted butter, at room temperature, cubed, plus more for greasing the ramekins
- Castor sugar, for dusting the ramekins
- 2 large egg yolks
- 3 tablespoons granulated sugar
- 1 1/2 tablespoons cornstarch
- 1/3 cup warm milk
- 1/4 cup fresh Meyer lemon juice, plus 1 1/2 teaspoons finely grated zest

- 5 large egg whites, at room temperature
- 1/2 teaspoon cream of tartar
- Pinch kosher salt

Chipotle-Honey Sweet Potatoes

French Onion Grilled Cheese
