Five-Alarm Chili

Before using blade steaks, trim and discard their interior line of gristle
- 1 1/2 pounds top blade steaks, trimmed and cut into 1/2-inch pieces (see note)
- 1 tablespoon brown sugar
- 2 teaspoons ground cumin
- Salt and pepper
- 2 tablespoons vegetable oil
- 1 poblano chile, seeded and chopped fine
- 2 (16-ounce) jars hot chunky salsa
- 2 (16-ounce) cans kidney beans, drained and rinsed
- 1 cup low-sodium beef broth
- 1 tablespoon hot sauce
Roberta's Pizza with Guanciale and Egg

To make the pizza sauce, drain the tomatoes and discard the juice
- One 28-oz can San Marzano tomatoes
- Good olive oil
- Fine sea salt
- 1 round of pizza dough
- 80 grams fresh mozzarella
- 20 grams guanciale, very thinly sliced (sub pancetta or bacon if you can't find guanciale - they wouldn't want me to give a substitute, but guanciale is not exactly easy to find everywhere)
- 1 large egg
How To Make Pizza Bites for a Crowd

1. Heat the oven to 400°F: Place a rack in the middle position
- For the sauce:
- Serves 8 to 10
- 2 teaspoons olive oil
- 1 large shallot, minced
- 2 cloves garlic, minced
- 1/4 teaspoon salt
- 1 (14-ounce) can crushed tomatoes
- For the pizza bites:
- 8 ounces low-fat, low-moisture mozzarella cheese
- 1 (14- to 16-ounce) ball pizza dough, store-bought or homemade
- 24 to 30 slices pepperoni, optional

Heat a non stock skillet over medium high heat
- 12 oz 80% lean ground beef
- 1/4 cup soy sauce
- 2 tsp sugar
- 4 garlic cloves, minced
- 1 tsp freshly grated ginger
- 1 tsp toasted sesame oil
- 2 cups cooked rice
- 2 cups vegetables such as julienned carrot, cucumber, radish, and bean sprouts
- Garnishes: julienned nori, sliced scallions, kimchi and toasted sesame seeds all work well
- 4 eggs
- 4 Tbsp gochujang sauce (more or less to taste)

Ginger Dipping Sauce: Stir all ingredients together in a small bowl until sugar is dissolved
- Ginger Dipping Sauce (Food Network):
- 1/4 cup light soy sauce
- 2 tablespoons rice wine vinegar
- 1/2-inch piece fresh ginger, peeled and finely grated
- 1 teaspoon sugar
- 1/2 teaspoon toasted sesame oil
- 1/2 lemon, zested
- For the fish sauce dipping sauce (Food52):
- 3 tablespoons fish sauce
- juice of 1 lime
- 3 tablespoons sugar, or to taste
- 1/2 tablespoon minced ginger
- 1/2 teaspoon thinly sliced fresh Thai chiles
- 1/3 cup water
- Salt and pepper, to taste
