Teriyaki Duck Breast

Gently score the fat side of the duck breasts into a cross hatch pattern
- 2 Moulard(or sometimes called Magret) duck breasts, about 12 oz each
- 1 cup dry sake
- 4 tablespoons turbinado sugar
- 1/4 cup tamari soy sauce, or you favorite kind
- 1/3 cup fresh squeezed orange juice
- 1/3 cup scallions, sliced into thin rings
Ham-and-Cheddar Scallion Biscuit Sandwiches

In a large bowl, whisk the flour with the sugar, salt, baking powder and baking soda
- 3 cups all-purpose flour
- 1/4 cup sugar
- 1 1/2 tablespoons kosher salt

- 1 1/2 sticks chilled unsalted butter, cut into 1/2-inch cubes

Potato Gnocchi with Browned Butter and Sage

- Gnocchi:
- 2 pounds russet potatoes
- 1 large egg, lightly beaten
- 3/4 cup plus 1 tablespoon (4 ounces) all-purpose flour, plus extra for the counter
- 1 teaspoon plus 1 tablespoon salt
- Sauce:
- 4 tablespoons unsalted butter, cut into 4 pieces
- 1 small shallot, minced
- 1 teaspoon minced fresh sage

Pork Tenderloin Sandwiches with Creamy Blue Cheese Dressing

- 3/4 cup mayonnaise
- 1/2 cup plain yogurt
- 1/2 cup extra-virgin olive oil
- 6 ounces blue cheese, preferably Maytag Blue, crumbled
- 1 tablespoon red wine vinegar

- All-purpose flour, for dredging
- 3 large eggs, lightly beaten
- 2 cups fine, dry bread crumbs
- Two 1 1/4-pound pork tenderloins, each one sliced on the bias into 4 pieces and pounded 1/4 inch thick

Chilean Chorizo and Herb Tortilla

In a large nonstick skillet, heat 1 tablespoon of oil until shimmering
- 3 tablespoons extra-virgin olive oil
- 6 ounces chorizo, sliced into 1/4-inch rounds
- 1 medium onion, thinly sliced
- Salt and freshly ground pepper
- 8 large eggs, lightly beaten
- 2 tablespoons all-purpose flour
- 1/3 cup coarsely chopped flat-leaf parsley

Baked Ziti

- 1 pound whole milk cottage cheese or 1 percent cottage cheese (see note)

- 8 ounces low-moisture whole-milk mozzarella cheese , cut into 1/4-inch pieces (about 1 1/2 cups) (see note)
Bibb and Radish Salad with Bacon Dressing

This is a simple combination of ingredients that I find refreshing
- 6 ounces slab bacon, trimmed and cut into thin, bite-size pieces 1/2 cup water
- 2 shallots, peeled
- Kosher salt
- 3 tablespoons red wine vinegar
- 8 radishes, tops trimmed down to 1/2-inch, thoroughly washed and dried
- 1 tablespoon Dijon mustard
- 3 heads Bibb lettuce, removed, cut in 1/2, washed and dried
- Cook's Note: For optimum results, chill the lettuce and radishes before tossing and serving. This salad is so refreshing when eaten cold!
