Onion-Cheese Spread

- 2 Tbsp butter
- 3 large onions, thinly sliced
- 1 tsp fresh thyme leaves, or 1/2 tsp dry thyme
- 2 ounces thinly sliced prosciutto, slivered
- 1/4 lb soft goat cheese, crumbled
Grandma's Enchiladas

Serve with chopped cilantro and lime wedges
- 3 pounds boneless beef chuck-eye roast, trimmed and cut into 1 1/2-inch cubes
- Salt and pepper
- 2 tablespoons vegetable oil
- 2 onions, minced
- 3 tablespoons chili powder
- 2 teaspoons ground cumin
- 2 teaspoons ground coriander
- 1/4 teaspoon cayenne pepper
- 4 garlic cloves, minced
- 2 (15-ounce) cans tomato sauce

Process graham crackers and brown sugar in food processor until finely ground, about 30 seconds
- For the Crust:
- 9 whole chocolate graham crackers broken into 1 inch pieces
- 3 Tbsp brown sugar
- 5 Tbsp butter, melted
- For the Filling:
- 2/3 cup butter, melted
- 2 cups confectioners' sugar
- 1 cup smooth peanut butter
- For the topping:
- 1 1/4 cups semisweet chocolate chips
Grilled Lamb Burgers with Marinated Red Onions, Dill, and Feta

Prepare a medium charcoal or gas grill fire
- 1-1/4 lb. ground lamb
- 2 tsp. sweet paprika
- 2 tsp. dried oregano
- 1 small clove garlic, minced and mashed to a paste
- Kosher salt
- 6 oz. feta, cut into 1/4-inch-thick slices (about 8)
- 2 Tbs. extra-virgin olive oil
- 2 Tbs. chopped fresh dill
- 1/2 small red onion, thinly sliced
- 3 Tbs. red-wine vinegar
- 1 teaspoon granulated sugar

In a small bowl, combine two tablespoons flour and ½ teaspoon salt
- 1 3⁄4 cups plus 2 Tbsp. (9 oz.) all-purpose flour, divided
- 1 1⁄2 tsp. kosher salt, divided, plus more to taste
- 1 large yellow onion (7 oz.), half thinly sliced, half finely chopped
- 1 cup vegetable oil
- 3 tbsp. unsalted butter
- 5 large eggs
- Pinch of freshly grated nutmeg
- 1 cup (4 oz.) grated Bavarian bergkäse cheese or gruyère
- 2 tbsp. finely chopped chives

Cilantro-Jalapeno Adobo Sauce

Add to Cooked Rice, 1 Tbsp per cup of rice; season with plenty of lime juice
- 4 large jalapeno chiles
- 6 large cloves of garlic, unpeeled
- 5 cups (about 4 ounces) lightly packed cilantro leaves and tender stems
- 6 Tbsps extra virgin olive oil
- 1 Tbsp lime juice, plus more as needed
- 3/4 tsp Kosher salt
