Potato Fry Bread

1. Make the starter: In a small bowl, mix the starter ingredients until the flour is completely incorporated
- For the Starter:
- 1/2 cup flour
- 1/4 cup water
- For the Dough:
- 1 cup water, heated to 105º
- 1 teaspoon active dry yeast
- Starter
- 1 1/2 cups all-purpose flour, plus more for dusting
- 3/4 cup whole wheat flour
- 1 teaspoon salt
- 1 cup cooked and riced russet potato
Pasta with Sausage and Cheese (Macaronia me Loukanika ke Tiri)

Heat oil in a 12" skillet over medium-high heat
- 2 Tbsp extra-virgin olive oil
- 6 oz. semi cured Greek pork sausages or sweet Italian sausages, cut into 1" pieces
- Kosher salt, to taste
- 8 oz. pasta, preferably garganelli or penne
- 1 ⁄2 cup white wine
- 1 ⁄2 oz. blue cheese, crumbled
- 1 ⁄4 cup heavy cream
- 1 ⁄4 cup loosely packed fresh oregano leaves
- 1 ⁄4 cup grated Parmesan cheese, for garnish
- Freshly ground black pepper, to taste
Sweet-and-Spicy Beef Kebabs

Combine the soy sauce, vinegar, brown sugar, Sriracha and garlic in a large bowl
- 1/2 cup soy sauce
- 1/4 cup rice vinegar (not seasoned)
- 1/4 cup packed light brown sugar
- 1 tablespoon Sriracha (Asian chile sauce)
- 3 cloves garlic, grated
- 1 1/2 pounds beef tri-tip, cut into 1-inch cubes
- 1 onion, cut into 1-inch wedges
- Vegetable oil, for brushing
- 4 scallions, cut into 1-inch pieces
Hot Bacon Dressing

In a large skillet, cook bacon until crisp; remove bacon and set aside
- ¾ pound sliced bacon, diced
- ½ cup chopped onion
- 1 cup cider vinegar
- 2 cups water
- 1 ½ cup sugar
- 2 tablespoons Dijon mustard
- 1 teaspoon salt
- ¼ teaspoon pepper
- 3 tablespoons corn starch
- 2 tablespoons cold water
Paprika-Ancho Spice Rub

- 1/3 cup light brown sugar
- 1/4 cup sweet paprika
- 2 tablespoons kosher salt
- 1 tablespoon plus 1 teaspoon ancho chile powder
- 1 tablespoon dried oregano
- 1 1/2 teaspoons ground allspice
- 1 1/2 teaspoons cayenne pepper
- 1 1/2 teaspoons ground cumin

Crisp Parmesan Baskets Filled with Goat Cheese

Preheat the oven to 400°
- 2 cups very finely grated Parmesan cheese (about 8 ounces)
- 8 ounces goat cheese, softened
- 1/2 tablespoon olive oil
- 1/2 teaspoon sherry vinegar
- 1 tablespoon chopped fresh herbs, such as chives, cilantro or parsley, or a combination
- 3 to 4 tablespoons milk
- Salt and freshly ground pepper

- 2 teaspoons coarsely cracked black peppercorns

- 1 tablespoon packed dark brown sugar

- 2 pounds skirt steak, cut into 5-inch lengths
