- 3 tablespoons extra-virgin olive oil
- 2 large leeks, trimmed, cleaned and sliced into 1/4-inch half-moons (approximately 3 cups)
- 1/4 teaspoon salt
- 1/2 teaspoon coarse ground black pepper
- 1/4 teaspoon red pepper flakes
- 6 ounces dry (cured) chorizo, skin removed, quartered lengthwise and chopped
- 2 tablespoons sherry vinegar
- 1 tablespoon sweet (dulce) smoked paprika
