Bagel Bread

We prefer bread flour here; its higher protein content gives this loaf a chewy yet light texture
- Topping:
- 2 teaspoons sesame seeds
- 2 teaspoons poppy seeds
- 2 teaspoons dried minced garlic
- 2 teaspoons dired onion flakes
- 2 teaspoons kosher salt
- Bread:
- Vegetable oil spray
- 3 cups (16½ ounces) bread flour
- 2 ¼ teaspoons instant or rapid-rise yeast
- ¼ cup light corn syrup
- 1 ½ tablespoons kosher salt
- 1 ½ teaspoons baking soda
- 1 large egg, lightly beaten
Canal House's Pimentón Fried Eggs

Serves 4 Heat olive oil in a heavy medium skillet over medium-high heat until quite warm
- 4 tablespoons olive oil
- 1/2 teaspoon pimentón (smoked paprika)
- 4 eggs
- Salt
- Good crusty bread, to serve
Chili's Queso (Slow Cooker)

Cut velveeta cheese into cubes
- 16 oz. Velveeta Cheese
- 1 cup milk (preferably Half & Half if you have it)
- 1/2 teaspoon ground cayenne pepper
- 2 teaspoons paprika
- 1 teaspoon salt
- 1 15-oz can no-bean chili
- 3 teaspoons chili powder
- 2 teaspoons cumin
- juice of 1 lime juice (about 1 tablespoon)
- tortilla chips, for serving
Steak de Burgo

Vermouth is a fortified white wine flavored with a variety of herbs and spices
- 1 Tbsp unsalted butter
- 1 Tbsp olive oil
- 4 beef tenderloin filets, patted dry and seasoned with salt and pepper (4 oz each, 1 inch thick)
- 1 cup sliced button mushrooms
- 2 tsp minced fresh garlic
- 1/4 tsp each dried basil and oregano
- 1/2 cup heavy cream
- 1/4 cup dry vermouth
- chopped fresh parsley
Garlic-Chive Baked Fries

Cut potatoes into 1/4 inch julienne strips
- Flavored Varieties:
- 4 medium russet potatoes
- 1 Tablespoon Olive Oil
- 4 teaspoons dried minced chives
- 1/2 teaspoon salt
- 1/2 teaspoon garlic powder
- 1/4 teaspoon pepper
- Herb: Mix 1 Tbsp. each minced fresh thyme, rosemary, and oregano.
- Chili: Mix 1⁄2 tsp. sugar, 1⁄4 tsp. each chili powder and cayenne, and 1⁄8 tsp. paprika.
- Cheese: Toss fries with 1⁄4 cup finely grated Parmesan.
- Cajun: 1 tsp. each kosher salt, garlic powder, dried thyme, and paprika
- 1/4 tsp. each cayenne pepper and black pepper

1. PREP THE BREAD: Slice the loaf of bread in half lengthwise
- 1/2 loaf crusty French baguette
- 1 clove garlic, cut in half
- 4-6 basil leaves
- 1 (6oz) can tuna
- 3/4 cup Nicoise or Kalamata olives, sliced
- 1/2 cup red bell pepper, seeded and sliced thin
- 1/2 small red onion, finely chopped
- 1/4 cup Italian flat leaf parsley, finely chopped
- 1 jar or can artichoke hearts, drained and chopped (optional)
- 1/4 cup blanched French green beans, sliced into thirds (optional)
- 3 tablespoons fresh lemon juice
- 6 tablespoons extra virgin olive oil, plus more for drizzling
