  • 1 3.4oz box of instant lemon pudding mix, one small box
  • 2 8oz packages of cream cheese
  • 3/4 cup frozen lemonade concentrate
  • For the Pie Crust
  • 2 1/2 cup graham cracker crumbs
  • 1/3 cup sugar
  • 2/3 cup butter, melted
  • Or you can use 1 graham cracker crust, 9 inch

I had seen a couple of recipes for Italian soup that I wanted to try, so I took my favorite things from each recipe...

  • 1-2 T olive oil
  • 1 lb ground turkey
  • 1 small onion, diced
  • 3 garlic cloves, minced
  • 1 T dry Italian seasoning
  • 1 t salt
  • 1/2 t pepper
  • 1 (15 oz) can stewed tomatoes, Italian style
  • 1 (15 oz) can Great Northern white beans, drained and rinsed
  • 3 (14 oz) cans low sodium beef broth
  • 1 t dry oregano
  • 1 T dried parsley
  • 1 cup cooked rotini (or any kind of pasta)
  • 1 cup shredded carrots
  • 1 medium zucchini, thinly sliced
  • 1 (10 oz) package fresh spinach (about 5 cups), chopped (I chopped it into very small pieces)
  • Grated Parmesan cheese (I like fresh the best)
