Pineapple Upside Down Donuts

- 1 cup all-purpose flour
- 1 tsp baking powder
- 1/4 tsp salt
- 1/4 cup granulated sugar
- 1 egg
- 1/4 cup sour cream
- 3 Tbs milk (we used vanilla soy milk)
- 1 Tbs butter, melted
- 1 tsp vanilla
- Pineapple topping
- 6 Tbs crushed pineapple
- 6 Tbs melted butter
- 6 Tbs brown sugar
- 6 marachino cherries
Caramel Apple Salad

- 4 medium apples, diced
- 2/3 cup pecans
- 1 pkg sugar free butterscotch pudding mix, dry
- 1 8 ounce can crushed pineapple with juice
- 8 ounce container of frozen whipped topping
- 1 tablespoon caramel sauce for drizzling on top, optional
- 2 tablespoons toffee bits for sprinkling on top, optional
Candy Cane Oreo Pie

- 27-30 Regular or double stuffed Oreos (regular size)
- 1/2 cup butter (1 stick) - melted
- 1-1/2 cups heavy whipping cream
- 2 cups semi-sweet chocolate chips
- 1/4 cup granulated sugar
- 2 eggs
- 1 tsp peppermint extract
- 1/4 tsp salt
- 1/2 cup Candy Cane Mini Oreos for topping
- 1/4 cup white chocolate candy melts
Strawberry Ice Cream Cake

This cake does take some time to make, so plan ahead
- Strawberry Cake:
- 2 cups sugar
- 1 (3 ounce) box strawberry flavored gelatin
- 1 cup butter, softened
- 4 eggs, room temperature
- 2 3/4 cups sifted cake flour
- 2 1/2 teaspoons baking powder
- 1 cup milk, room temperature (I used 2%)
- 1 tablespoon vanilla extract
- 1/2 cup strawberry puree made from sweetened strawberries (see below for instructions)
- Additional:
- 1 package Blue Bunny® homemade vanilla ice cream
- 1 (16 ounce) cool whip
- garnish: strawberries
- Strawberry Puree:
- 2 cups fresh strawberries, rinsed and cut in half
- 2-3 tablespoons sugar

- 1/2 cup butter, softened
- 1/2 cup sugar
- 1/2 cup brown sugar
- 1 egg
- 1/3 cup peanut butter
- 1/2 teaspoon salt
- 1/2 teaspoon baking soda
- 1/2 teaspoon vanilla
- 1 cup quick cooking oatmeal
- 1 cup flour
- 1 cup chocolate chips
- 1 cup powdered sugar
- 1/4 cup peanut butter
- 2 – 4 tablespoons evaporated milk (regular milk works fine, too)
