Most folks would agree that food and memories have a close relationship
- 1 lb. elbow macaroni
- 3/4 - 1 c. mayonnaise
- 4 eggs, boiled
- 1/2 - 3/4 c. sweet pickle relish
- 1/2 of a large white onion, diced
- 3-4 stalks of celery, chopped (omitted on occasion)
- salt and pepper, as desired
- NOTE - this list of ingredients in approximate, at best. We never measure...it is taste-tested as it's made to get the proper balance of onion, relish and mayonnaise. So the measurements I have given are my best estimate.

- For the Cake
- 1/2 cup unsalted butter, softened
- 3/4 cup brown sugar
- 1/2 cup sugar
- 1 - 8 ounce can crushed pineapple, drained very well
- 1 teaspoon rum extract
- 1 teaspoon coconut extract
- 2 eggs
- 2 1/4 cups flour
- 1 teaspoon salt
- 1/2 teaspoon baking soda
- 1 teaspoon baking powder
- 1 teaspoon ground mace
- 2 cups finely shredded zucchini
- 1 cup sweetened shredded coconut
- 1 - 16 ounce jar maraschino cherries, drained & quartered
- For the Frosting
- 1 cup sweetened shredded coconut
- 6 Tablespoons butter
- 1/3 cup marshmallow cream
- 3/4 teaspoon salt
- 3/4 teaspoon rum extract
- 3/4 teaspoon coconut extract
- 3 cups powdered sugar
- 1/3 cup heavy whipping cream
- 24 maraschino cherries with stems, drained & patted dry

Watermelon Sangria

Watermelon Sangria is perfect for a refreshing, fruity, and sweet drink
- 6 cups cubed watermelon (if you want a stronger watermelon flavor, use up to 9 cups)
- 1 (750 milliliter) bottle white wine (I used Moscato)
- 1 cup vodka
- 1/2 cup triple sec
- 1-3 cups cubed seeded watermelon (I used about 1 cup, but you can use more for more watermelon flavor)
- 1 medium lime, quartered
- 1 orange, cut into wedges
- 1 cup blueberries
Lunch Box Pizzas

1. Flatten each biscuit into a 3-in
- 1 tube (7-1/2 ounces) refrigerated buttermilk biscuits (10 biscuits)
- 1/4 cup tomato sauce
- 1 teaspoon Italian seasoning
- 10 slices pepperoni
- 3/4 cup shredded Monterey Jack cheese
- 1 . Flatten each biscuit into a 3-in. circle and press into a greased muffin cup. Combine the tomato sauce and Italian seasoning; spoon 1 teaspoonful into each cup. Top each with a slice of pepperoni and about 1 tablespoon of cheese.
- 2 . Bake at 425° for 10-15 minutes or until golden brown. Serve immediately or store in the refrigerator. Yield: 10 servings.
