Batter Fried Corn Dogs

To make the dipping sauces, mix together the ingredients for each sauce (in separate bowls) until well combined
- Spicy Ranch Dipping Sauce:
- 1 cup yellow cornmeal
- 1 cup all-purpose flour
- 1/4 tsp salt
- 1/4 tsp onion powder
- 1/4 cup white sugar
- 1 tsp ground cayenne pepper
- 1 tsp smoked paprika
- 4 tsp baking powder
- 1 egg
- 1 cup milk
- Vegetable oil, for frying
- 1 package (8 pieces) beef frankfurters
- Eight 8'' wooden skewers (if skewers are thin, use two per corn dog)
- 1/2 cup buttermilk
- 1/2 cup mayonnaise
- 1 package ranch dressing mix
- Hot sauce, to taste
- 2 Tbsp fresh parsley, chopped
- Chili Mustard Dipping Sauce:
- 1/2 cup Dijon mustard
- 1/2 cup mayonnaise
- 1 Tbsp chili powder
- 1/4 tsp garlic powder
- 1/2 tsp honey
- 1 Tbsp cider vinegar
- 1 Tbsp green onion, finely chopped
Crisp Sweet Pickles Recipe

Cut pickles into 1/2-in. slices; return to the jar
- 1 jar (32 ounces) whole kosher dill pickle slices, drained
- 1-1/4 cups sugar
- 3 tablespoons cider vinegar
- 1 tablespoon dried minced onion
- 1 tablespoon celery seed
Better Than Ever Tuna Casserole

Preheat oven to 350°F. Spray a 13'' x 9'' casserole dish with cooking spray
- 1 (12-oz) package whole grain egg noodles, cooked according to package directions
- 2 Tbsp olive oil
- 1 cup onion, chopped
- 8 oz mushrooms, sliced
- 2 (11.5-oz) cans fat-free cream of mushroom soup
- 1-1/2 cups low-fat milk
- 1/2 cup fat-free half and half
- 1/2 tsp dried thyme
- 1 tsp kosher salt
- 1/2 tsp ground black pepper
- 1/4 tsp garlic powder
- 1 cup reduced-fat cheddar cheese, shredded
- 3 (5-oz) cans tuna fish, drained and squeezed of excess moisture
- 1-1/2 cups frozen peas
- 1/4 cup seasoned bread crumbs
- 1/4 cup Parmesan cheese, grated
Taco Pizza

1.Heat oven to 375 degrees
- 1 lb. ground beef
- 1 envelope taco seasoning mix
- 2 (8 oz.) cans Pillsbury crescent rolls
- 1 (16 oz.) can refried beans (I used the jalapeño kind)
- 2-3 cups shredded cheddar cheese or Mexican blend
- 1/2 cup chopped tomatoes
- 1/4 cup sliced black olives
- 4 green onions, chopped
Country-Style Pot Roast

Roll roast in the flour. Sear roast in vegetable oil in a large Dutch oven on all sides until brown
- 3-5 lb chuck roast
- 3 Tbsp flour
- 2 Tbsp vegetable oil
- 1-3/4 cup beef broth
- 1/4 tsp peppercorns
- 1 tsp salt
- 2 bay leaves
- 2 lbs potatoes, pared and quartered
- 1 cup celery, sliced
- 2 cups carrots, sliced
- 1 lb white onions, peeled and quartered

Shepherd's Pie Hand Pies

- 1/2 lb ground beef
- 1 cup onion, chopped
- 1 medium Yukon gold potato, peeled and diced
- 1/2 cup carrot, diced
- 1/4 cup frozen peas
- 1/4 cup frozen corn
- 2 Tbsp Worcestershire sauce
- 1/2 cup canned chicken gravy
- 1 egg
- 1 Tbsp water
- 2 boxes (4 rolls) pre-made pie crust

- 4 pounds cucumbers, sliced
- 8 small onions, sliced
- 1/2 cup canning salt
- 5 cups sugar
- 4 cups white vinegar
- 2 tablespoons mustard seed
- 2 teaspoons celery seed
- 1-1/2 teaspoons ground turmeric
- 1/2 teaspoon ground cloves

- 4-3/4 cups whole milk

- 1/2 cup chopped walnuts, divided

Boil lasagna noodles. Sauté beef, then add salt, pepper, and some of the strained tomatoes
- 1 lb. lasagna noodles
- 1 lb. lean ground beef, crumbled and cooked
- 2 onions chopped
- 2 green peppers chopped
- 2 boxes of sliced mushrooms
- 1 large container of Ricotta cheese
- 2 lbs. of shredded mozzarella cheese
- 1 stick of cream cheese
- 2 cans puréed tomatoes
- Olive oil (to sauté veggies)
- Salt and pepper (to taste)
- Garlic powder (to taste)
- Oregano powder (to taste)
