Pot Roast in Foil

Place piece of aluminum foil in ungreased pan (13x9
- 4 lb beef arm blade or cross rib pot roast
- 1 can cream of mushroom soup
- 1 pkg dry onion soup
- 8 small red potatoes
- 8 medium carrots, cut crosswise in halves
- 2 T. water
Lasagna-Style Baked Ziti

Cook the ziti according to the package instructions
- 1 lb ziti
- 1 T. olive oil
- 1 lg yellow onion, diced
- 3/4 t. kosher salt
- 1/4 t. black pepper
- 1 lb. lean ground beef
- 3 cloves garlic, minced
- 1/2 c. chopped fresh oregano
- 1-26 oz. jar of pasta sauce
- 1/2 c. (2 oz.)grated Parmesan
- 1-15 oz. container of ricotta
- 1-10 oz. box frozen spinach, thawed and squeezed
- 1 c. grated mozzarella

In a shallow glass dish container, combine garlic and lime juice
- 1 T. minced garlic
- 3/4 c. fresh lime juice
- 2 1/4 lb beef skirt or flank steak
- salad oil
- salt
- flour tortillas
- guacamole
- peppers
- onion

Roast Chicken with Lemon and Rosemary

Heat oven to 375 degrees. Remove rind from lemon with vegetable peeler, cut into thin strips
- 1 lemon
- 1 whole roasting chicken (about 5 1/2 lbs)
- salt and pepper
- 3 large cloves garlic halved
- 3 sprigs of parsley
- 2 1/2 t. dried rosemary leaves
- 1 T. vegetable oil
- 3 T. olive oil
- 1/2 c. chicken broth
- 1/3 c. white wine
- 3 T. unsalted butter
- chopped parsley
Oatmeal Cookies

Mix together butter br. sugar and white sugar
- 1 c. (2 sticks) butter, softened
- 1 1/4 c. dark brown sugar, packed
- 1/4 c. white sugar
- 2 eggs
- 2 t. vanilla
- 1/4 t. cinnamon
- 2 c. flour (all purpose)
- 1 t. baking soda
- 1 t. salt
- 3 c. oatmeal (whole, not quick oats)
- 1/2 - 3/4 pkg. semi-sweet chips

Preheat over to 375 degrees
- 2 eggs
- 2/3 c. shortening
- 2/3 c. butter
- 2 t. vanilla
- 1 1/2 c. sugar
- 3 1/2 c. flour
- 2 t. baking powder
- 1 t. salt
Cream Puff

Cream Puff: Place water, butter and salt in a heavy saucepan
- Cream Puff:
- 1 c. water
- 1 stick (1/2 c. butter)
- 1/4 t. salt
- 1 c. flour
- 4 eggs
- Filling:
- 1 small box of instand vanilla pudding
- 1 small tub of Cool Whip
- Milk
- Crimson Sauce:
- 1 thawed pkg of frozen strawberries
- 1/2 c. red currant jelly
- 2 level T. cornstarch
Fish Tacos

Fish Tacos: In a glass bowl, combine the canola oil, garlic, oregano, chili powder and bay leaf
- Avocado-Cilantro Sauce:
- 2 c. canola oil
- 1 T. chopped garlic
- 1 t. dried oregano
- 2 t. dried oregano
- 2 t. chili powder
- 1 bay leaf
- 1 1/2 lb mahi mahi
- 12 corn tortillas, warmed
- 1 c. shredded green cabbage
- 1 c. chopped tomatoes
- 1 ripe avocado
- 2 T. water
- 2 T. ranch dressing
- 2 t. seeded chopped jalapeno
- 1 t. chopped fresh cilantro
- 1/4 t. chopped garlic
- salt and pepper
- 2 1/2 T. heavy cream
- 1 t. fresh lime
- Papaya Salsa:
- 1/2 ripe papaya, chopped
- 3 c. chopped tomatoes
- 1/2 c. chopped red onion
- 1/2 bunch fresh cilantro, chopped
- 2 avocados, diced
- juice of 2 lemons
- 1 T. salt to taste
- 1 t. black pepper
Chocolate Chip Bundt Cake

Mix well cake mix, eggs, instant pudding, water, oil and sour cream
- 1 chocolate cake mix
- 4 eggs
- 1 - 3 oz. pkg instant chocolate pudding
- 1/2 c. water
- 1/2 c. oil
- 1 c. sour cream
- 1 - 12 oz. package of chocolate chips
