German Apple Cake I

Original Recipe Yield 1 -9x13 inch cake
- 2 eggs
- 1 cup vegetable oil
- 2 cups white sugar
- 2 teaspoons ground cinnamon
- 1/2 teaspoon salt
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 4 cups apples - peeled, cored and diced
Fahita Seasoning Mix

1. Combine all of the ingredients in a small bowl
- 3 Tbsp. cornstarch
- 2 Tbsp. chili powder
- 1 Tbsp. salt
- 1 Tbsp. paprika
- 1 Tbsp. sugar
- 2-1/2 tsp. crushed chicken bouillon cube
- 1-1/2 tsp. onion powder
- 1/2 tsp. garlic powder
- 1/2 tsp cayenne pepper
- 1/4 tsp. crushed red pepper flakes
- 1/2 tsp. cumin
Fresh Tomato Salsa

A standard and almost necessary accompaniment to most Mexican food is salsa
- 2-3 medium sized fresh tomatoes (from 500 gr to 700 gr), stems removed, finely diced
- 1/2 red onion, finely diced
- 1 jalapeño chili pepper (stems, ribs, seeds removed), finely diced
- 1 serano chili pepper (stems, ribs, seeds removed), finely diced
- 1 lime, juice of
- 1/2 cup chopped cilantro
- Salt and pepper to taste
- Optional: oregano and or cumin to taste
Chicken Quesadillas

1. Preheat the broiler. Grease a baking sheet
- 455 g skinless, boneless chicken breast, diced
- 1 (35 g) packet fajita seasoning (or make seasoning - see recipe)
- 1 tablespoon vegetable oil
- 2 green bell peppers, chopped
- 2 red bell peppers, chopped
- 1 onion, chopped
- 10 (10 inch) flour tortillas
- 224 g package shredded Cheddar cheese
- 1 tablespoon bacon bits
- 224 g shredded Monterey Jack cheese
- Small handful chopped fresh cilantro
