Minty Mushy Peas

- 2 tablespoons olive oil
- 1 bunch spring onions, chopped
- 1 handful fresh mint, leaves picked
- 1 pound (500 grams) frozen peas
- 2 large knobs butter
- Sea salt and freshly ground black pepper

Preheat your oven to 200ºC/400ºF/gas 6 and put a large pot of salted water on to boil
- • sea salt and freshly ground black pepper
- • extra virgin olive oil
- • 1 white onion, peeled and finely chopped
- • 2 cloves of garlic, peeled and finely sliced
- • 1 or 2 dried red chillies, crumbled
- • 1.5kg ripe tomatoes or 3 x 400g tins of good-quality plum tomatoes
- • a large handful of fresh basil leaves
- • optional: 1 tablespoon red wine vinegar
- • 400g dried orecchiette
- • 4 big handfuls of freshly grated Parmesan cheese
- • 3 x 150g balls of mozzarella .

My London 'father', Gennaro Contaldo, makes these to use up all his leftover antipasti
- Basic Bread Recipe:
- Just over 2 pounds (1 kilogram) strong bread flour
- Just over 1 pint (625 millilitres) tepid water
- 1 ounce (30 grams) fresh yeast or 3 (1/4 ounce/7 gram) sachets dried yeast
- 2 tablespoons sugar
- Sea salt
- Extra flour, for dusting
- Filling
- 2 courgettes (zucchini), sliced and char-grilled
- 2 artichoke hearts, char-grilled and sliced
- A handful black olives
- A handful sun-dried tomatoes
- A couple slices Parma ham
- A bunch basil, leaves ripped
- A drizzle olive oil
- A drizzle herb vinegar
- 1 ball mozzarella, ripped
- A handful Parmesan shavings
- A couple fresh plum tomatoes
- 2 ounces Montgomery cheddar
- A good drizzle extra-virgin olive oil
- Freshly ground black pepper
- Maldon sea salt
Mrs. Sigg's Fresh Pumpkin Pie

1. Cut pumpkin in half and remove seeds
- 1 * 1 sugar pumpkin
- 1 * 1 recipe pastry for a 9 inch single crust pie
- 2 * 2 eggs
- 1 * 1 cup packed light brown sugar
- 1 * 1 tablespoon all-purpose flour
- 1/2 * 1/2 teaspoon salt
- 2 1/2 * 2 1/2 teaspoons pumpkin pie spice
- 1 * 1 (12 fluid ounce) can evaporated milk
Creamy Smashed Potatoes

1. Place potatoes in a saucepan and cover with water
- 2 1/2 * 2 1/2 pounds potatoes, peeled and quartered
- 4 * 4 ounces reduced fat cream cheese
- 1/2 * 1/2 cup reduced-fat sour cream
- 1/2 * 1/2 teaspoon onion salt
- 1/2 * 1/2 teaspoon salt
- * Dash pepper

First things first: remove the stalks from the aubergines, slice them up into 1cm thick slices, and put to one side
- optional:
- • 3 large firm aubergines
- • olive oil
- • 1 onion, peeled and finely chopped
- • 1/2 a bulb of spring garlic, if you can get it, or 1 clove of regular garlic, peeled and finely sliced
- • 1 heaped teaspoon dried oregano
- • 2 x 400g tins good-quality plum tomatoes or 1kg fresh ripe tomatoes
- • sea salt and freshly ground black pepper
- • a little wine vinegar
- • a large handful of fresh basil
- • 4 large handfuls of freshly grated Parmesan cheese
- • 2 handfuls of dried breadcrumbs
- • a little fresh oregano, leaves chopped
- • 1 x 150g ball of buffalo mozzarella .
Carrot Cake

Beat eggs and slowly add sugar until creamy
- 4 Eggs
- ¾ cup brown sugar
- ¾ cup white sugar
- 1 ¼ cup oil
- 3 cups grated Carrot
- 2 ¼ cups Flour
- 2 tsp Baking Powder
- 1 tsp Bi Carbonate of soda
- 1 tsp Cinnamon
- ½ tsp allspice
- 1 cup chopped pecans
- ½ tsp nutmeg
