- 1 tsp. mustard seeds (black or yellor or mixture)

- 1/2 cup chicken broth
PEAS****Sugar Snap Pea Salad with Oriental Dressing

- DRESSING:
- 2 - 3 servings
- 2 cups sugar snap peas
- 1 tsp. sesame oil
- 1/2 tbsp. grated fresh ginger
- 1 clove garlic, grated
- 1 pinch red pepper flakes (easy)
- 1/2 tbsp. oyster sauce
- 1/2 tbsp. Kecap Manis
- 1/2 tbsp. soy sauce
- 1 pinch of sugar or honey
- Maldon salt and fresh ground pepper, to taste
- 1 tsp. white and black sesame seeds
CAKE****Upside-Down Sour Cream Cake with Caramelized Pears

- Sour Cream Cake
- 1 1/2 cups all purpose flour
- 1 1/2 teaspoons baking powder
- 3/4 teaspoon salt
- 1/2 cup unsalted butter, room temperature
- 2/3 cup sugar
- 2 large eggs
- 1 1/2 teaspoons vanilla extract
- 1/2 cup sour cream or greek yogurt
- Nonstick vegetable cooking spray
- Caramelized Pears
- 4 pears, peeled, cored, cut into small dice
- 3 tablespoons unsalted butter
- 1 tablespoon sugar
- 1 tablespoon fresh lemon juice
BEET****Roasted Beet Salad with Roquefort and Toasted Walnuts - Slow Cooker

- 4 servings
- 4 - 5 roasted beets, peeled and cut into wedges
- 1 1/2 tbsp. evoo or walnut or hazlenut oil or combination
- 1 tsp. dijon mustard
- 1/2 tbsp. white or champagne vinegar
- 2 tbsp. minced fresh chives or finely mince shallot
- 2 oz. roquefort or other blue cheese
- 1/4 cup walnut pieces, toasted
- freshly ground pepper and Maldon salt to taste
GROUND****Lion's Head Meatballs

I love - Dan likes the meatballs but not so much the cabbage, although he did eat some of it
- 3 Servings
- 8 ounces ground turkey, chicken or pork or combination
- 1 tbsp. egg white equivalent
- 2 green onions, minced
- 1/2 tbsp. sake or dry sherry
- 1 tsp. grated ginger and minced garlic
- 1 tbsp. soy sauce
- 1 tsp. sugar
- 1 tsp. sesame oil
- 6 ounces chopped savoy cabbage or baby bok choy
- 1 cup chicken broth
KALE****King of Greens Salad

- 4 servings
- 1 container PC baby kale or 1 large bunch Black Kale (leaves torn into bite size pieces)
- 3 tablespoons Olive Oil
- 1/2 to 1 Lemon
- 3 tablespoons Currants (1 1/2 ounces)
- 3 tablespoons toasted Pine Nuts ()
- 20 grams freshly grated Pecorino or Parmigiano
- 1 teaspoon Red Chili Flakes
- Salt and Pepper
TOMATO - Sofrito

* Cut the tomatoes in half and grate into a large bowl on the box grater, discarding the skins
- 5 ripe plum tomatoes or one large can San Marzano tomatoes, pureed
- 3/4 cup Spanish extra virgin olive oil
- 2 small spanish onions, very finely minced
- 1 tsp. sugar
- 1 tsp. smoked salt
- 2 cloves garlic, grated
- 1 tsp. sweet smoked Spanish paprika
- 1 bay leaf

- 2 teaspoons butter
- 1 teaspoon vegetable oil
- 2 Spanish onions (about 1 pound), halved and thinly sliced
- 1/4 teaspoon sugar
- 1/4 teaspoon sea salt
- 1 tablespoon sherry vinegar
- 1/2 teaspoon minced fresh thyme
- 3 applewood-smoked bacon strips
- 3/4 cup (3 ounces) shredded Gruyère cheese
- 1/2 cup sour cream
- 1/2 cup mayonnaise
- 1/4 teaspoon freshly ground black pepper

- 2 tbsp. brown sugar
- 1 teaspoon grated fresh ginger
- 1/4 cup soy sauce
- 2 tbsp. ketchup
- 2 cloves garlic, crushed
- salt and pepper to taste
