Bacon Cheddar and Mushroom Squares

This quiche-like delight has a cheddar shortbread crust, reminiscent of a traditional sweet square
- Crust
- 1 cup (250 mL) all-purpose flour
- 2 tsp (10 mL) sugar
- ¼ cup (50 mL) unsalted butter, room temperature
- ½ cup (125 mL) coarsely grated medium cheddar cheese
- Filling
- 2 tbsp (25 mL) olive oil
- 3 tbsp (45 mL) minced shallot
- ¾ lb (175 g) fresh button mushrooms, sliced
- 1 clove garlic, minced
- 1 tsp (5 mL) finely chopped fresh thyme
- Salt and freshly ground pepper
- 3 large eggs
- ¾ cup (175 mL) half-and-half cream
- 6 slices cooked bacon, coarsely chopped
- 2 cups (500 mL) coarsely grated medium cheddar cheese
Chocolate Crunch Cookies

Preheat oven to 350°F (180°C)
- 1 ½ cups (375 mL) butter
- 1 cup (250 mL) brown sugar
- 1 cup (250 mL) granulated sugar
- 2 eggs
- 1 tsp (5 mL) vanilla
- 2 cups (500 mL) flour
- 1 tsp (5 mL) baking powder
- 1 tsp (5 mL) baking soda

- Caramelized Onions
- 1 tbsp (15 mL) olive oil
- 1 large onion, thinly sliced
- 1 tsp (5 mL) granulated sugar
- Chicken Topping
- 1 tbsp (15 mL) olive oil
- 2 boneless skinless chicken breasts, cut into ½-inch (1-cm) dice

- 1 lb. salted butter room temp
- 1 cup sugar
- 1 1/2 cups powdered sugar
- 2 Tbs vanilla
- 4 cups AP flour
- For the Filling:
- 1 bag (14 oz.) caramel candies (about 50 individual caramels), unwrapped
- 1/3 cup milk or cream
- 1/2 teaspoon vanilla
- 1 T. coarse sea salt
Exotic Emerald Martini

Experience the exotic with this delicious cocktail; the pale emerald hue is as delicate as a flower
- In a cocktail shaker filled with ice, add 1 oz Uphoria Asian pear liqueur, 1/2 oz vodka and 1/2 oz fresh lime juice. Shake and strain into a Martini glass. Garnish with an Asian pear slice.

- 2 * 2 tbsp (30 mL) ground cumin
- 11/2 * 11/2 cups (375 mL) thick spicy salsa
- 400 * 400-g bag shredded cheese such as cheddar-and-mozzarella mix, about 4 cups (1 L)

- 8 * 8 medium flour tortillas, about 7 in. (17.5 cm) wide

- 1 recipe pizza dough (recipe follows) or purchased dough, about 1 lb (500 g)
- 6 to 8 slices thick-cut bacon, preferably double-smoked
- 2 skinless, boneless chicken breasts or 4 skinless, boneless thighs
- 1 cup (250 mL) thick ranch salad dressing
- ¾ cup (175 mL) freshly grated `Za hard-cheese blend (recipe follows) or hard-cheese of choice

- 2 tbsp (25 mL) olive oil or duck fat
- 1 chorizo sausage (about 7 oz/200 g), sliced
- 1 cup (250 mL) chopped onions
- 1 tbsp (15 mL) chopped garlic
- 3 large squid, cut in ½-inch-thick (1-cm) rings
- 2 cups (500 mL) chopped canned tomatoes
- with their juices
- 2 tbsp (25 mL) chopped parsley

- 1 bay leaf
- 2 cans white kidney beans, 540 mL each,
