French Onion Soup

- For the croutons:
- 1 ½ lb (700 g) onions, thinly sliced
- 2 tablespoons olive oil
- 2 oz (50 g) butter
- 2 cloves garlic, crushed
- ½ level teaspoon granulated sugar
- 2 pints (1.2 litres) good beef stock (see link to recipe at the end of the method)
- 10 fl oz (275 ml) dry white wine
- 2 tablespoons Cognac
- salt and freshly milled black pepper
- French bread or baguettine, cut into 1 inch (2.5 cm) diagonal slices
- 1 tablespoon olive oil
- 1-2 cloves garlic, crushed
- To serve:
- 6 large or 12 small croutons (see above)
- 8 oz (225 g) Gruyère, grated
- Pre-heat the oven to gas mark 4, 350°F (180°C).
Amaretto panna cotta with apricots

Place the cream and sugar in a small saucepan and bring slowly to the boil
- 1 568ml carton whipping cream
- 1 tbsp caster sugar
- 1 tbsp lemon juice
- 6 tbsp amaretto liqueur
- 2 tsp powdered gelatine
- 1 x 411g can apricot halves in juice
- a few toasted flaked almonds
Vegetarian Moussaka

Begin by preparing the aubergines: to do this cut them into ½ inch (1 cm) dice leaving the skins on
- For the topping:
- 2 aubergines, each 8 oz (225 g)
- 10 fl oz (275 ml) vegetable stock
- 2 oz (50 g) Puy lentils
- 2 oz (50 g) green lentils
- 4 tablespoons olive oil
- 1 large red pepper, de-seeded and chopped into ¼ inch (5 mm) dice
- 2 cloves garlic, peeled and crushed
- 1 x 14 oz (400 g) tin chopped tomatoes, drained
- 7 fl oz (200 ml) red wine
- 2 level tablespoons tomato purée or sun-dried tomato paste
- 1 level teaspoon ground cinnamon
- 2 level tablespoons chopped fresh parsley
- salt and freshly milled black pepper
- 2 medium onions, finely chopped
- 1 x 9 oz (250 g) tub ricotta (see recipe introduction)
- 10 fl oz (275 ml) whole milk
- 1 oz (25 g) plain flour
- 1 oz (25 g) butter
- ¼ whole nutmeg, grated
- 1 large egg
- 1 oz (25 g) Parmesan (Parmigiano Reggiano), freshly grated (see recipe introduction)
- salt and freshly milled black pepper
- Pre-heat the oven to gas mark 4, 350°F (180°C).

- 300 ml (1/2 pint) double cream
- finely pared rind of 1 orange
- 125 g (4oz) caster sugar
- 1 vanilla pod, split
- 60 ml (4 tbsp) milk
- 10 ml (2 tsp) powdered gelatine
- sauce
- 450 g (1lb) strawberries
- 30 ml (2 tbsp) icing sugar
- 15 ml (1 tbsp) balsamic vinegar
Fried Crab Cakes

Mix together, roll into balls and fry!
- 1 lb crabmeat
- 1 egg yolk
- 1 1/2 tsp salt
- 1 tsp dry mustard
- 2 tsps worc sauce
- 1 tbsp mayonnaise
- 1 tbsp chopped parsley
- 1/2 tsp paprika
- 1 tbsp melted butter
- 1 cup breadcrumbs
- pepper to taste
- 1/4 cup oil
- 1 lemon for garnish
Banana Loaf

Line an 8" loaf tin, mash bananas with sugar, add eg, soda and salt, stir in melted marg, add flour

- 4 oz Softened hard marg
- 8 oz S/R Flour
Kenwood Walnut Coffee Cake

Place all ingredients into a bowl and gradually increase speed until the flour is incorporated
- 2 oz walnuts, chopped
- 6 oz SR flour
- 1/2 tsp baking powder
- 1/2 tsp salt
- 4 oz castor sugar
- 4 oz pre-creamed margarine
- 2 eggs
- 1 tbsp powdered instant coffee
- 3 tbsp/60ml milk
Malteser Cake

- 4 ozs (112g) unsalted butter
- 5 oz (140g) milk chocolate
- 8 oz (224g) digestive biscuits roughly crushed
- 8 oz (224g) Maltesers cut in half
- 14 oz milk chocolate for topping
