Costa Rican Rice and Beans

1. Saute onion in oil until it just begins to soften
- 2 tbsp canola oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 3 cups cooked white rice
- 2 cups black beans, drained and rinsed
- 1 tsp cumin
- 1 tsp coriander
- 1/2 tsp ground ginger
- 2 tbsp Worcestershire sauce (2 to 3)
- Salt and pepper
- Cilantro
- Sliced scallion
Very Cranberry Muffins

1. Combine oats and milk. Set aside for 15 minutes
- 1 cup quick-cooking oats
- 3/4 cup skim milk
- 1 1/2 cups whole wheat pastry flour
- 1 Tablespoon baking powder
- 1/4 cup sugar

- 2 egg whites
- 1 teaspoon vanilla extract

Easy Healthy Homemade Granola

- 2 cups raw, whole rolled oats (AKA old fashion oats), preferably organic
- 1/2 cup raw nuts, chopped
- 1/4 cup raw seeds (sunflower or pumpkin seeds are great)

- 2-3 tablespoons maple syrup or raw honey (or a combo of both)
