Fettuccine with Tuna, Lemon & Fried Capers

Don't be afraid to pair tuna with strong flavors that can stand up to it
- Kosher salt
- 1 lemon, scrubbed
- 1/4 cup plus 2 Tbs. extra-virgin olive oil; more for drizzling
- 1/4 cup small (nonpareil) capers, rinsed, drained, and patted dry
- 3 cloves garlic, thinly sliced
- 1 12-oz. can or 2 6-oz. cans solid white tuna in water, drained well
- 1/8 tsp. crushed red pepper flakes
- 3/4 lb. dried fettuccine
- Freshly ground black pepper
- 3 Tbs. chopped fresh flat-leaf parsley
Caramelized Onion Risotto

Onions are often used in risotto, but not usually as the main ingredient
- 3 Tbs. extra-virgin olive oil
- 2 lb. yellow onions (about 4 medium), halved through the root and thinly sliced lengthwise
- Kosher salt
- 4 cups lower-salt chicken broth
- 2 oz. (4 Tbs.) unsalted butter
- 1-1/2 cups arborio rice
- 1/2 cup dry white wine, such as Sauvignon Blanc
- 1 oz. finely grated aged Gouda or Parmigiano-Reggiano (about 1 cup on a rasp grater)
- Freshly ground black pepper

Roasted Asparagus

1. Preheat oven to 475°. Hold the end of an asparagus stalk and bend until it snaps off
- 2 bunches asparagus (about 2 lbs.)

- 1/3 cup packed freshly shredded parmesan cheese
- 2 teaspoons fresh lemon juice

- 1 Tablespoon Soy Sauce
- 1 Teaspoon White Wino Vinegar
- 2 Teaspoons Dried Parsley Flakes

- 1 jalapeno, minced ( save the seeds to add later if you want more heat)
- 1 serrano chili pepper, seeded and minced
- Small handful cilantro, chopped (from Nunez farm at my market)
- 1 bunch scallions, thinly sliced ( also from Nunez)
- Juice of one lime
- Optional dried oregano and ground cumin to taste
- Salt and freshly ground pepper to taste
Tequila-Chipotle Shrimp Tostadas with Lime and Sour Cream

Fried corn tortillas (tostadas) are a great base for spicy shrimp and zingy sour cream
- 1/3 cup plus 1 Tbs. olive oil
- 1/2 tsp. pure chipotle chile powder
- Kosher salt
- 1 lb. extra-large (26 to 30 per lb.) shrimp, peeled and deveined
- 3/4 cup sour cream
- 2 medium limes, 1 finely grated to yield 2 tsp. zest and squeezed to yield 1 Tbs. juice; the other cut into 4 wedges
- 1/2 tsp. honey
- 1/4 cup white tequila
- 8 5- to 6-inch corn tortillas
- 1 cup thinly sliced green cabbage
- 1 large firm-ripe Hass avocado, diced
- Chopped cilantro, for garnish (optional)
