Honey Chicken Skewers with Grilled-Corn Salad

1. Place twenty 8-inch wooden skewers in water to soak
- 1/2 * 1/2 cup ketchup
- 2 * 2 tablespoons honey
- 1 * 1 tablespoon Worcestershire sauce
- 1 1/2 * 1 1/2 pounds boneless, skinless chicken breasts
- * kosher salt and pepper
- * canola oil, for the grill
- 6 * 6 ears corn, shucked
- 1 * 1 tablespoon unsalted butter, cut into pieces

Chocolate Kahlua Cake

Combine sugar, butter, kahlua and water in a small pan over low heat until butter melts and sugar dissolves
- 1 cup sugar
- 1/2 cup butter
- 1/4 cup kahlua
- 1/4 cup water
- 1 pkg devils food cake mix
- 8 oz sour cream
- 1 small pkg instant chocolate pudding mix
- 4 eggs
- 1/2 cup oil
- 1/2 cup water
- 1/4 cup kahlua
- 1 tsp cinnamon
- 1 pkg (12oz) chocolate chips
Spanish Albondigas with Rice and Beans

Albondigas with Rice and Beans
- 1 Spanish onion
- 180 gm each coarsely minced pork and veal
- 2 tbsp each coarsely chopped oregano and flat-leaf parsley, plus extra to serve
- 2 garlic cloves, finely chopped
- 1 1/2 tsp each ground sweet paprika and cumin
- 1/2 tsp dried chilli flakes
- 50 mlextra-virgin olive oil
- 250 gmcherry tomatoes, halved 200 gm
- (1 cup) Calasparra rice (see note)
- 600 mlhot chicken stock
- 50 mlfino sherry
- 100 gmflat beans, trimmed and cut into 2cm lengths

- Fish broth:
- 1 kb Manilla clams
- 8 T salt, divided
- water to cover clams
- 1 1/4 lb frozen calamari cleaned
- 3 T olive oil
- 3 lg cloves garlic, chopped
- 1 1/2 sweet onion, chopped
- 1 red bell pepper, chopped
- 1/2 C green onion in 1 1/2in lengths
- 1 T tomato paste
- 1 packet paella seasoning
- 1 t sea salt
- 14 head on shrimp
- 1-2 packets cuttlefish ink
- 1 1/2 C Spanish Bomba short-grained rice
- 3 C fish broth, plus more as needed
- 2-3 lbs white fish head and bones
- 1 large sweet onion cut in half
- 1 green or red bell pepper halved
- 1 bunch leeks, cut in 3 in pieces
- 1 t sea salt
- 6 C water
- Alioli:
- 1 lg egg
- 1 T fresh lemon juice
- 1 t sea salt
- 1/4 C olive oil
- 2 lg cloves garlic, minced
Wild Rice and Mushroom Pilaf with Cranberries

1. Cook the rice blend according to the package directions
- 1 1/2 * 1 1/2 cups long-grain and wild rice blend
- 3/4 * 3/4 cup dried cranberries
- 3 * 3 tablespoons olive oil
- 1 * 1 large onion, chopped
- 1 * 1 pound mixed mushrooms (such as cremini, oyster, and shiitake), sliced
- * kosher salt and black pepper
- 1/2 * 1/2 cup dry white wine
- 1/2 * 1/2 cup chopped fresh flat-leaf parsley
- 2 * 2 tablespoons chopped fresh tarragon
Roasted Red Bell Pepper Hummus

Combine all ingredients in food processor and pulse until the consistency desired
- 1 can Garbanzo Beans
- 1/2 cup Tahini
- 1/4 cup Lemon juice
- 2 Tb olive oil
- 4-5 Garlic Cloves
- 1/2-3/4 cups Roasted Red Bell Peppers
- dash Cayenne Pepper
Lemony shrimp salad with couscous

Light fare...serve immediately as shrimp will 'break down' in lemon juice
- 1 cup couscous
- kosher salt and black pepper
- 1 1/2 pounds cooked peeled and deveined medium shrimp
- 1/2 pound snap peas, trimmed and cut into bite-size pieces
- 1 pint cherry tomatoes, halved
- 3/4 cup torn fresh basil leaves
- 2 scallions, thinly sliced
- 2 tablespoons olive oil
- 2 teaspoons finely grated lemon zest, plus 3 tablespoons fresh lemon juice

- 2 T veg oil
- 1 t paprika
- 1 C flour
- 2 # chicken cut into chunks
- 1 C pineapple
- 2 T brown sugar
- 1 T white wine vinegar
- 4 basil leaves, chopped
- 1 t ground nutmeg
- 1 C pineapple chunks
- 2 C white rice cooked
