Spaghetti with Sausage alla carbonara

Remove casings from sausage
- 1 pound sweet Italian sausage
- 1 tablespoon extra virgin olive oil
- 1 tablespoon unsalted butter
- 1 medium onion, sliced thin
- 1 1/2 teaspoons pepper
- 2 bay leaves
- 1/2 cup dry white wine
- Salt
- 1 pound spaghetti
- 3 large eggs
- 1/4 cup pecorino Romano
Butternut Squash Lasagna

Heat the oil in a heavy large skillet over medium-high heat
- 1 tablespoon olive oil
- 1 butternut squash - (1 1/2 to 2 lbs) peeled, seeded, and cut into 1" cubes
- Salt to taste
- Freshly-ground black pepper to taste
- 1/2 cup water
- 3 amaretti cookies crumbled
- 1/4 cup butter
- 1/4 cup all-purpose flour
- 3 1/2 cups whole milk
- 1 pinch nutmeg
- 3/4 cup fresh basil leaves - (lightly packed)
- 12 no-boil lasagna noodles
- 2 1/2 cups shredded whole-milk mozzarella cheese
- 1/3 cup grated Parmesan
Spinach, Pear and Pancetta Salad

Sauté pancetta in nonstick skillet over medium heat until crisp, about 6 minutes
- 1 cup diced pancetta or bacon (about 5 ounces)
- 1/4 cup minced shallots
- 3 tablespoons Sherry wine vinegar
- 2 teaspoons Dijon mustard
- 2 teaspoons minced fresh thyme or 1 teaspoon dried
- 1/2 cup extra-virgin olive oil
- 1 1/2 10-ounce packages ready-to-use spinach leaves
- 2 Asian pears or Bosc pears, halved, cored, thinly sliced
- 1 medium-size red onion, thinly sliced
- 1 head radicchio, separated into leaves
The Best Chicken Tortilla Soup

- 1 (46 ounce) cans chicken broth
- 1 (15 ounce) cans tomato sauce
- 1 (15 ounce) cans diced tomatoes
- 3 cups cooked chicken, shredded (I use rotisserie from the deli)
- 2 anaheim chilies, diced
- 1 jalapeno pepper, diced
- 1/2 cup diced onion
- 3 -4 large tomatoes, diced
- 2 garlic cloves, minced
- 2 tablespoons minced cilantro
- 1 tablespoon chili powder
- 2 teaspoons cumin
- 2 teaspoons pepper
- 1 teaspoon salt
- 2 teaspoons Tabasco sauce (I use the chipotle flavor)
- 1 or 2 Chipotle peppers, chopped
- 1 lime
- 1 cup shredded cheddar cheese
- 1 avocado, chopped
- 1/4 cup cilantro, pulled from stem
- 1 lime, cut into wedges
- 2 cups crushed tortilla chips
Smoked Chile Scalloped Sweet Potatoes

- 1 tablespoon vegetable oil
- 1/2 cup thinly sliced shallots, from 1-2 large shallots
- 1 tablespoon minced fresh ginger
- 2 tablespoons Thai green curry paste
- 4 cups low sodium chicken broth
- 1 can (13.5 fl oz) coconut milk
- 2 tablespoons fish sauce
- 4 packed teaspoons light or dark brown sugar
- 2 tablespoons fresh lime juice, from 1 lime
- 1/2 teaspoon turmeric
- For Serving
- 4 oz thin rice noodles
- 2 cups shredded cooked chicken, from a rotisserie chicken
- Handful chopped fresh cilantro
- 3 scallions, thinly sliced
- Sriracha sauce
- Lime wedges
