Chicken Mushroom Quesadillas

Heat the oil in a large skillet over a medium heat
- 1 tablespoon canola oil
- 1 large onion, chopped (about 2 cups)
- 8 ounces white button mushrooms, (about 3 cups)
- 3 cloves garlic, minced
- 2 cups cooked chopped skinless, boneless chicken breast (1 breast half)
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 1 teaspoon dried oregano
- 2 cups baby spinach leaves, sliced into ribbons
- 1/2 teaspoon salt
- 1/4 teaspoon fresh ground black pepper
- 4 (10-inch) whole-grain flour tortillas
- 1 cup shredded Mexican cheese mix or Cheddar
- 1/2 cup salsa
- 1/4 cup reduced-fat sour cream
Cape Cod Chopped Salad

Preheat the oven to 400 degrees F
- For the dressing:
- Ingredients
- 8 ounces thick-cut bacon, such as Niman Ranch
- 8 ounces baby arugula
- 1 large Granny Smith apple, peeled and diced
- 1/2 cup toasted walnut halves, coarsely chopped
- 1/2 cup dried cranberries
- 6 ounces blue cheese, such as Roquefort, crumbled
- 3 tablespoons good apple cider vinegar
- 1 teaspoon grated orange zest
- 2 tablespoons freshly squeezed orange juice
- 2 1/2 teaspoons Dijon mustard
- 2 tablespoons pure maple syrup
- Kosher salt
- 1/2 teaspoon freshly ground black pepper
- 2/3 cup good olive oil
Soy Chorizo Quinoa

1. Combine the rinsed quinoa and 1 1/2 cups water in a medium saucepan and bring to a boil
- For the dressing:
- 3/4 cup quinoa, rinsed
- 1 tablespoon olive oil
- 1 (12-ounce) package soy chorizo, casings removed
- 1 cup black beans, rinsed and drained
- 1 cup corn kernels
- 2 roma tomatoes, diced
- 3 green onions, sliced
- 1 avocado, diced
- 1/4 cup chopped fresh cilantro
- 1/4 cup olive oil
- 2 tablespoons freshly squeezed lime juice
- 1 teaspoon ground cumin
- 1/2 teaspoon chile powder
- Freshly ground black pepper, to taste
Ginger Snaps

- • 1 1/2 cups unsalted butter
- • 2 cups light brown sugar
- • 1/2 cup molasses
- • 2 eggs
- • 4 1/2 cups unbleached allpurpose flour
- • 4 teaspoons ground ginger
- • 4 teaspoons baking soda
- • 1 teaspoon salt
- • 3 tablespoons fresh ginger, grated
- • 1 cup candied ginger, finely chopped

Crockpot carnitas tacos with pork tenderloin

- 2 pounds pork tenderloin or loin
- 1/2 onion chopped
- 3 cloves garlic minced
- 1 jalapeño chopped

In a Dutch oven, melt the butter or heat the oil over medium heat
- 2/3 cup dried red lentils
- 4 cups Vegetable Stock
- 1 tbsp butter or olive oil
- 2 cloves garlic, minced
- 1 medium-size onion, chopped
- 2 carrots, finely chopped
- 2 stalks celery, finely chopped
- 3 cups (28 ounce can) cooked tomatoes
- 1 bay leaf
- 3/4 cup (6 ounce can) tomato paste
- 1/4 cup chopped fresh parlsey
- 1 tsp dried thyme leaves or 1 Tbsp fresh
- 1 tsp dried dillweed or 1 Tbsp fresh
- 1 tsp dried tarragon or 1 Tbsp fresh
- 1/4 tsp dried marjoram or 1 tsp fresh
- Freshly ground pepper, to taste
