Paella

Using a large round flat pan, heat up the olive oil
- Rice, 1 cup, short grain, i.e. Calasparra rice
- Chicken, 2-3, cut in small pieces
- Seafood, such as mussels, clams, and/or shrimp
- Chorizo, 1-2 links
- Garlic, 1 fist
- Onions, 1 medium, roughly cut
- Red pepper, 1 - sliced lengthwise
- Smoky pepper
- Tomatoes, 2 small, diced
- Chicken broth
- Olive oil
- Saffron, 1 tsp. with 1 tbsp. warm water
- Cumen, 1 tsp.
- Paprika, 1 tsp.
- Salt and Pepper
- Meyer lemon
Chocolate Mousse

Separate egg whites from yolks
- 8 - 8 oz. chocolate, melted
- 2 - 2 tbsp. cocoa powder
- 5 - 5 tbs. water
- 1 - 1 tsp. espresso
- 1 - 1 tsp. brandy
- 2 - 2 eggs, separated
- 1/8 - 1/8 tsp. salt
- 1/2 - 1/2 tsp. sugar
Hot Squash Ice Cream

1. Preheat oven to 350º. Split the squash and remove seeds
- For the ice cream
- Canola oil
- 1 butternut squash
- 1/4 c. stout beer
- Mulled maple syrup
- Sea salt
- For the pecan dirt and horchata shot
- 1 c. raw pecans
- 2 c. filtered water
- 4 tbsp. brown sugar
- 1 tsp. ground cinnamon
- 1/2 tsp. fresh nutmeg
- 1 tsp. cardamom
- Salt
