Apple Brandy-Glazed Pork Tenderloin

- 3 cups unfiltered apple cider
- 1/2 cup brandy
- 3 thyme sprigs
- 1 large shallot, sliced
- 2 tablespoons butter
- 2 teaspoons Dijon mustard
- 1/2 teaspoon kosher salt, divided
- 1/2 teaspoon freshly ground black pepper, divided
- 2 (3/4-pound) pork tenderloins, trimmed
- Cooking spray
Lemony Prosecco Float

Place two small scope of sorbet into each of six glasses Top with Prosecco and raspberries
- 1 pint lemon sorbet
- 1 bottle Prosecco chilled

Pork Tenderloin with Sage, Garlic and Honey

Rub the nutmeg all over the pork and season generously with salt and pepper
- 1/2 teaspoon freshly ground nutmeg
- One 1 1/2-pound pork tenderloin, cut in half crosswise and tied (have your butcher do this)

- 3 large garlic cloves, thinly sliced
- 12 sage leaves
- 3 tablespoons unsalted butter

- 1/2 medium onion, thinly sliced

Oven Roasted Tomatoes

Heat oven to 350 degrees. Line a 12 x 17 inch rimmed baking sheet with foil
- 3 Tablespoons plus 1 cup extra-virgin olive oil
- 4 – 5 pounds medium large ripe beefsteak tomatoes (about 12)
- or plum tomatoes
- Kosher salt
- Granulated sugar
- 1 Tablespoon balsamic vinegar
- 1 head of garlic; slice each clove very, very thin
- 2 Tablespoons fresh thyme leaves

Tuscan liver pate

Fry the vegetables together in the olive oil and half of the butter
- 1/2 an onion, chopped finely
- 1 carrot, chopped finely
- 1 stick celery, chopped finely
- 1 tbsp finely chopped flat-leaf parsley
- 3 tbsp olive oil
- 40 g unsalted butter
- 1 chicken liver, trimmed and washed carefully
- 100 g calf's liver, trimmed, washed and dried
- 2 tbsp dry white wine
- 1 heaped tbsp tomato purée, diluted in 4 tbsp hot water or stock
- salt and freshly ground black pepper
- 25 g capers, rinsed and chopped finely
