Captians Chowder

Remove skin from fish, cut into small pieces
- 2 lbs Ocean Perch Filletws
- 1/2 C Green Pepper - finely chopped
- 2 Med. Onion - Finely chopped
- 1 lg potatoe - diced
- 1/2 lb sliced mushrooms
- 1/3 C butter melted
- 1 can corn
- 2 cans cream of mushroom soup
- 2 C Milk
- 1/2 C White Wine
- scant of salt
- 1 Tsp Pepper
- 2 oz pimento - finely cut
Chicken and Mixed Vegetable Quesadillas with Artichokes, Mushrooms, and Roasted Red Peppers

Directions Coat a large skillet or griddle with cooking spray
- Cooking spray
- 2 cooked chicken breast halves
- 8 (6 to 8-inch) flour tortillas
- 1/2 cup chopped red onions
- 1/2 cup sliced mushrooms
- 1/2 cup sliced roasted red peppers (from water-packed jar)
- 1/2 cup sliced artichokes (from water-packed can or jar)
- 1/4 cup shredded Monterey jack or pepper jack cheese, for each quesadilla
Bread Pudding

Grease 2qt baking dish. Layer Bread Mix Hot water & brown sugar until disolved
- 6 Slices Bread (cut into 1 1/2" Cubes)
- 1 C. Hot Water
- 1 C. Brown Sugar
- 4 Eggs - lightly beaten
- 2 C. Warm Milk
- 1 1/2 C. Sugar
- 1 tsp. Vanilla
- 1/2 tsp. ground cinnamon
- 1/8 tsp Salt
Chicken and Smoked Sausage Etouffee

Set a Dutch oven over medium heat and add a 2-count of olive oil
- Extra-virgin olive oil
- 1 pound andouille sausage links
- 4 leg-thigh chicken pieces
- Kosher salt and freshly ground black pepper
- 2 tablespoons unsalted butter
- 3/4 cup all-purpose flour
- 1 medium onion, roughly chopped
- 2 ribs celery, roughly chopped
- 1 green bell pepper, roughly chopped
- 4 cloves garlic
- 1 (12-ounce) can beer
- 4 cups low-sodium chicken stock
- 2 bay leaves
- 2 tablespoons paprika
- Pinch cayenne pepper
- 1 cup chopped fresh flat-leaf parsley
- 2 scallions diced
Chocolate White Chocolate Chunk Cookies

Preheat the oven to 350 degrees F
- 1/2 pound unsalted butte,r at room temperature
- 1 cup light brown sugar, packed
- 1 cup granulated sugar
- 2 teaspoons pure vanilla extract
- 2 extra-large eggs at room temperature
- 2/3 cup good unsweetened cocoa
- 2 cups flour
- 1 teaspoon baking soda
- 1 teaspoon kosher salt
- 1 1/2 pounds good white chocolate, coarsely chopped
Citrus Salad with Poppy-Seed Dressing

Directions: Slice off the ends of each orange and place the oranges on a cutting board
- 3 oranges, preferably navel
- 1/4 cup red wine vinegar
- 1 tablespoon Dijon mustard
- 1 tablespoon honey
- 1/3 cup extra-virgin olive oil
- 2 tablespoons poppy seeds
- Salt and pepper
- Two 6-ounce bags baby spinach
Beef Stroganoff

Place all ingredients down to the flour in a crockpot and cook on low for 6-8 Hours
- 1 Lb Stew Beef or Round Steak sliced thin
- 1 Onion Sliced
- 8 oz sliced fresh mushrooms
- 1 -2 C. Beef Broth
- 1 Lg clove Garlic
- 1 tsp Salt
- 1/4 tsp Pepper
- 2 Tbl Catsup
- 1 Tbl Worchestershire Sauce
- 2 Tbl Red Wine
- 2-3 Tbls Cornstarch
- 1 C. Sour Creme
Golden Casserole Potatoes

Cut Potatoes in slices or Pieces
- 6 Medium Potatoes Cooked
- 1/4 C Butter
- 2 C Shredded Cheddar Cheese
- 2 C Sour Creme
- 2 Tbls Butter
- 1 Tsp Salt
- 1/4 Tsp White Pepper
- 1/3 C green Onions
Zucchini Burger

- 2 C Zucchini Grated
- 1 Egg
- 1/2 C Bread Crumbs

- 1 cube butter
- 6 oz Semi Sweet Baking Chocolate
- 2 Lg Eggs
- 2 Egg Yolks
- 1/4 to 1/3 Cup Sugar
- 2 Tbls Flour
- Pinch of Salt (if nunsalted butter is used)
