Fish Sticks

1. Make an egg wash with just the egg whites – no water
- 2 egg whites
- 1 lb fish (salmon)
- 1 c flour
- 1 c flavoured bread crumbs
- ¼ c parmesan cheese
- Extra virgin olive oil to drizzle over the fish sticks
- Baking sheet lined with parchment paper
- **Mayo Sauce**
- 1 c yogurt
- 1/3 c mayo
- ¼ tsp mustard
- Chopped flat leaf parsley

1. Brown and cook your meat all the way through
- Meat of your choice
- 1 c cream cheese
- 1 cup cheese of your choice
- s & p to taste
- 1 egg (egg wash)

Onion Rings

1. Chop your onions and put them in a 3 c of buttermilk for 5 – 10 mins
- 1 large onion
- 3 c buttermilk
- 6 c light oil
- 1 ½ c of cornmeal
- 1 ½ c of flour
- 1 tablespoon chili powder
- 1 tablsp cumin
- 2 tablsp paprika
- 1 tablsp salt
- Dip

- 1 sm jar chopped pimento

- 1 cup - mugh daal
- 4 cups - polau rice
- 2 cup - frozen vegetables
- 1 medium - onion
- 4 - jalapeno or chilli

3 chocolate brownies

1. Preheat oven to 325 and grease and line a pan with parchment paper
- 10 oz of bittersweet or semi sweet chocolate
- 2/3 c of unsalted butter
- ¾ c of sugar
- 1 tsp vanilla
- 3 large eggs
- ½ c apf
- ½ tsp salt
- 3 oz white choc chips
- 3 oz milk choc chips
Brie and Walnut Strudel

1. Mix all ingerdients in mixer for 8 minutes
- Filling:
- 1/3 c butter
- 1 1/4 cups hot hot tap water
- 1/4 plus 2 tablespoons of sugar
- 4 cups of bread flour
- 1/2 tsp salt
- 1 . 1 c pf ricotta cheese
- 2 . 6 oz of single brie cheese
- 3 . Chives
- 4 . Garlic and pepper
- 5 . Toasted Walnuts
Pastry Puff Pork

1. On a flat surface roll out the puff pastry to a little bit bigger then the pork tenderloin
- 1 pork tenderloin
- 1 pkg prosciutto
- 1 pkg puff pastry – one 8 x 16’ square should do
- 2 tablespoons Dijon mustard
- 1 egg
- 1 tsp water
- a bit of thyme
- salt and pepper
Chocolate Cupcakes

1. On a double boiler melt the chocolate and butter
- ½ c chocolate chips
- 2 sticks of butter
- ¾ c apf
- 1 tsp baking powder
- 1/3 c coco powder
- pinch of salt
- 1 tsp vanilla
- 1 c sugar
- 3 eggs (added one at a time)
- *Icing*
- 3 oz unsweetened chocolate
- 1 stick of butter (room temp)
- 8 oz softened cream cheese
- 1 tsp chili powder
- ½ tsp cinnamon
- pinch of salt
- 1 tsp vanilla
- 3 c icing sugar
Chili Suizas Bake

1. In a big pot set to med-high heat - add some extra virgin olive oil
- 2 lbs ground chicken
- 4 poblano peppers
- 1 jalapeno pepper
- 4 cloves of garlic
- One med/large onion
- 12 Tomatillo's or 1 24 oz can crashed tomatillos
- Some cilantro leaves
- 2 cups chicken stock
- 2 tablespoons of honey
- 1 c jack cheese
- 1 c swiss cheese
- Juice of one lime
- Sour cream/creme fresh
- Tortilla chips lightly crushed
