In a shallow dish or bowl, mix together the flour, salt, pepper and oregano
- 1/4 cup all-purpose flour for coating
- 1/2 teaspoon salt
- 1/4 teaspoon ground black pepper
- 1/2 teaspoon dried oregano
- 4 skinless, boneless chicken breast halves - pounded 1/4 inch thick
- 4 tablespoons butter
- 4 tablespoons olive oil
- 1 cup sliced mushrooms
- 1/2 cup Marsala wine
- 1/4 cup cooking sherry
Chili Relleno

Lightly grease 9x13 inch glass baking dish
- 4 eggs
- 1 1/2 cups of milk
- 2 tablespoons of flour
- 1/2 teaspoon of pepper
- 1/4 teaspoon salt
- 3 7oz can whole green chilies split open
- 4 cups of shredded cheddar (about 1 pound)
- 4 cups of Shredded monterey jack cheese
Tex Mex Rice Cakes

1. Combine the first 6 ingredients in a bowl and mix to combine
- Tex-Mex Rice Cakes (Makes 14-16 Cakes)
- 1 Cup Cooked Brown Rice
- 1/2 Cup Whole Wheat Bread Crumbs
- 1/2 Cup Cheddar Cheese, grated
- 3/4 Cup Frozen Corn, defrosted
- 2 Tbsp Cilantro, chopped
- 1/2 Tsp Salt
- 2 Eggs, whisked About
- 2 Tbsp Vegetable or Canola Oil for cooking

1. Preheat oven to 400 degrees
- 1 Medium Eggplant, peeled
- 1/3 Cup Flour
- 1/2 Tsp Salt
- 1/2 Cup Bread Crumbs
- 1/4 Cup Parmesan Cheese, grated

- 1 Lb Chicken Tenders, cleaned, rinsed & dried
- 1 Tsp Salt
- 1/2 Cup Sesame Seeds, untoasted

- 1/2 Cup Whole Wheat Panko or Bread Crumbs
- 1/4 Cup Parmesan Cheese, grated
- 1/2 Tsp Salt
- 1/2 Tsp Garlic Powder
- 1 Large Egg
- 1/4 Cup Flour
- 2 Medium Zucchini, cut into 1/4 inch coins
- Optional: Weelicious Tomato Sauce for dipping

1. Preheat oven to 350 degrees
- Spinach Ricotta Bites (Makes 20 Bites)
- 2 Tbsp Butter
- 1 Small Yellow Onion, chopped
- 1 Garlic Clove, minced
- 2 Large Eggs, Beaten
- 1 Cup Ricotta Cheese (low or full fat ricotta will work)
- 1/2 Cup Mozzarella Cheese, shredded
- 1/2 Cup Parmesan Cheese, Grated
- 1 10 Oz Pkg Frozen Chopped Spinach, defrosted and drained WELL (I use my hands to squeeze as much liquid out of the spinach as possible)
