Potato Casserole

1. First of all, in a pot filled with enough water, add in the potatoes and boil them until done
- 6 potatoes, peeled
- 2 tablespoons butter, melted
- 1 1/2 pound cheddar cheese, grated
- 1 1/2 cup crumbled corn flakes
- 1 can cream of chicken soup
- 1 cup sour cream (8 ounces)
- 1 cup milk
- 1/4 cup butter
- onion salt
Seven Layer Dip

In a medium bowl, blend the taco seasoning mix and refried beans
- 1 (1 ounce) package taco seasoning mix
- 1 (16 ounce) can refried beans
- 1 (8 ounce) package cream cheese, softened
- 1 (16 ounce) container sour cream
- 1 (16 ounce) jar salsa
- 1 large tomato, chopped
- 1 green bell pepper, chopped
- 1 bunch chopped green onions
- 1 small head iceberg lettuce, shredded
- 1 (6 ounce) can sliced black olives, drained
- 2 cups shredded Cheddar cheese
Rotelle Dip

Cook ground turkey using a fork to crumble it fine as it’s cooking
- 1 lb cheese (Velveeta)
- 1 can Rotels
- ½ lb ground turkey seasoned to your liking (cooked and crumbled fine)
Mac, Chicken, and Cheese Bites

1. Preheat oven to 400 degrees
- Mac, Chicken & Cheese Bites (Makes 20 Mini Bites)
- 1/2 Lb. Macaroni
- 2 Tbsp Butter
- 2 Tbsp Flour
- 1/2 Tsp Salt
- 1 1/2 Cup Milk
- 1 Cup White Cheddar
- 1/2 Cup Parmesan Cheese, divided
- 1/4 Cup Bread Crumbs
- 1 Cup Cooked Chicken, diced
White Chicken Chili

Cut chicken into cubes and cook thoroughly
- 4 Boneless skinless chicken breasts
- 16 oz of Salsa
- 2 Cans of chicken broth
- 3 15oz cans of Great Northern Beans
- Jack Cheese (optional)
Stuffed Mushrooms

Preheat oven to 350 degrees F (175 degrees C)
- 12 whole fresh mushrooms
- 1 tablespoon vegetable oil
- 1 tablespoon minced garlic
- 1 (8 ounce) package cream cheese, softened
- 1/4 cup grated Parmesan cheese
- 1/4 teaspoon ground black pepper
- 1/4 teaspoon onion powder
- 1/4 teaspoon ground cayenne pepper
Crunchies

Melt chocolate and butterscotch chips in top of double broiler over hot (not boiling) water or melt in microwave
- 1 Cup of semisweet chocolate chips
- 1 Cup Butterscotch chips
- 1 Cup peanuts
- 1 Cup Chow mein noodles
Chicken Sun Dried Tomato Mini Burgers

1. Preheat grill, panini maker, or saute pan
- Chicken Sun Dried Tomato Mini Burgers (Makes 8 mini burgers, or 4-5 big burgers)
- 1/3 Cup Sun Dried Tomatoes, packed in oil
- 1 1/4 lb Ground Chicken
- 1/4 Cup Parmesan Cheese
- 1 Tsp Salt
- 2 Slices Mozzarella, Provolone, White Cheddar or any kind of cheese you like, cut in fourths
- 8 Mini Burger Buns (I got them at Trader Joe’s)
- Olive Oil

In a large saucepan over low heat, melt butter; add garlic and cook for 30 seconds
- 1 tablespoon butter
- 2 cloves garlic, minced
- 1/2 cup sun-dried tomatoes, chopped
- 1 cup chicken broth, divided
- 1 cup heavy cream
- 1 pound skinless, boneless chicken breast halves
- salt and pepper to taste
- 2 tablespoons vegetable oil
- 2 tablespoons chopped fresh basil
- 8 ounces dry fettuccini pasta
Spinach Dip

- 10 oz of Frozen spinach
- 1 Package of Knorr Vegetable Soup mix
- 1 1/2 Cup of Sour cream
- 1 Cup of Mayonnaise
- 1 Loaf of sourdough bread
