- 2 tbsp margin (melted)
- 1/2 box crushed graham wafers
- 1 basket fresh strawberries
- 1 liter of low fat Cool Whip
- 1/2 liter of skim milk
- 1/2 liter of plane yogurt
Veal Scallopini

Combine , salt, paprika, oil, lemon, garlic, mustard, nutmeg and sugar in jar
- 1 1/2 lb veal steaks
- 1 tsp salt
- 1 tsp paprika
- 1/2 cup salad oil
- 1/4 cup lemon juice
- 1 clove garlic
- 1 tsp prepared mustard
- 1/4 tsp nutmeg
- 1/4 flour
- 1/4 oil
- 1 red onion sliced
- 1 green pepper
- 1 100z can chicken broth
- 1/4 lb mushroom sliced
- 1 tbsp butter
Lemon Berry Trifle

- 3 eggs
- 3 egg yolks
- 1/2 cup unsalted butter, cubed
- 1 tbsp grated lemon rid
- 2/3 fresh lemon juice (approx 3 lemons)
- 1 can (225g) Reddi-wip whipped cream
- 4 cups fresh or frozen berries
Easy Crab Dip

1. In a sauce pan over low heat, combine cheese, mayonnaise, wine, mustard, sugar, onion juice and garlic
- 8 oz. cream cheese, softened
- 3 tablespoons mayonnaise
- 2 teaspoon dry white wine
- 2 teaspoon Dijon mustard
- 1/2 teaspoon powdered sugar
- 1/4 teaspoon onion juice (put a small wedge of onion through a garlic press)
- 1 small clove of garlic, pressed
- 1/2 lb fresh crab meat
- 1/4 cup toasted slivered almonds
- 1/8 cup minced parsley
Prosciutto-wrapped Jalapeno Peppers stuffed with Goat Cheese

This is a gourmet version of a pub snack called jalapeno poppers
- 1/3 cup (75 ml) mayonnaise
- 2 tsp (10 ml) fresh lemon juice
- 1/2 tsp (2 ml) ground cumin
- 1/2 tsp (2 ml) ground oregano
- 1 tsp (5 ml) honey
- 6 medium jalapeno peppers, halved lengthwise through the stem, seeds removed and discarded
- 1/4-1/3 lb (125-155 g) soft goat cheese
- 6 paper-thin slices of prosciutto, each cut in half lengthwise
- 1 tbsp (15 ml) olive oil

- Topping:
- 1/3 cups sugar
- 1/4 cups butter
- 1 egg
- 2/3 cups milk
- 1 1/2 cups flour
- 3 tsp baking powder
- 1/2 tsp vanilla
- 1 tbsp melted butter
- 1 tsp cinnamon
- 1/4 cups brown sugar
Cedar Planked Brie Cheese with Raspberries and Almonds

Place plank into a tray or pan at least 2" deep
- 1 - 12 " x 8" x 3/4 cedar-plank
- 1/2 cup plus 2 tbsp reserved Lindemans BIN 50 Shiraz
- 2 cups water
- 1 wheel brie or camembert cheese, 200-250 g
- 1 tsp + 1 tsp Ted Reader's World Famous BBQ Planking Spice
- 1 tbsp honey
- 1 tbsp almond silvers
- 1 tsp chopped fresh thyme
- 1/2 cup fresh raspberries
- 1 french baguette, sliced
Quick Chicken Primavera Risotto

1. Season chicken with salt and black pepper
- 2 boneless, skinless chicken breast halves (about 6 oz each / 175 g each), flattened to 1/2 inch (1 cm) thickness
- 1 lemon, cut in half crosswise
- 1 medium onion, chopped
- 1 large clove garlic, pressed
- 2 pkgs (250 g each) original or roasted chicken flavor pre-cooked rice.
- 1 medium carrot, cut into julienne strips
- 1 medium zucchini, sliced
- 2 plum tomatoes, seeded and diced
- 2-2 1/2 cups (500-625 ml) chicken broth
- 2 oz (60 g) grated fresh Asiago cheese (1/2 cup /125mk)
- 1/4 cup (50 ml) snipped basil
- 2 oz (60 g) mascarpone cheese or cream cheese (1/4 cup/50ml; optional)
Strawberries with Maple Cream

1. Divide the strawberries evenly among serving dishes
- 3 lb. fresh Ontario berries, washed, hulled and cut in half (1.35 kg)
- 2 cups full fat sour cream (500 ml)
- 1 cup full fat yogurt 3 - 5 % butterfat (250 ml)
- 6 tbsp light grade A pure Canadian maple syrup
