GARLIC GINGER CHICKEN WINGS

In bowl, sprinkle chicken with five-spice powder; toss with 1 tbsp of the soy sauce
- If you don't have light soy sauce, substitute 2 tbsp soy sauce mixed 1 tbsp water. Already separated and trimmed chicken wings are a real time-saver If you can't find them, cut tips off whole chicken wings then cut wings at remaining joint.
- 3 lb. separated trimmed chicken wings
- 1 tsp five-spice powder
- 3 tbsp light soy sauce
- 3 tbsp rice vinegar or white vinegar
- 2 tbsp packed brown sugar
- 4 tsp finely chopped garlic (about 3 cloves)
- 4 tsp finely chopped fresh ginger
- 4 tsp vegetable oil
- Pinch black pepper
- 11 small hot pepper (such as Thai bird's-eye pepper), finely chopped
- 3 green onions, chopped
SHORT RIBS RED WINE-BRAISED

- 1 yellow onion, cut thinly
- 1 hot pepper, de-seeded, cored and chopped

ITALIAN POTATO WEDGES

1. Cut each of the potatoes into 8 equal wedges
- 2 large potatoes, unpeeled
- 4 large ripe tomatoes, skinned and seeded
- 2/3 cup vegetable stock
- 2 tbsp tomato paste
- 1 small yellow bell peppers, cut into strips
- 1-1/2 cup buttom mushroom, quartered
- 1 tbsp chopped fresh basil
- 1/2 cup grated cheese

COWBOY BAKED BEANS

In a heavy pot (cast iron), saute the bacon pieces until halfway cooked and the fat is rendered
- 4 cups dry pinto beans
- 1 pound thick-cut bacon, cut into pieces

- Cake:
- 1 cup chopped pecans or walnuts
- 1 18-1/2oz. (520g) pkg. yellow cake mix
- 1 3-1/4 oz. (90 g) pkg. or 102 g Jell-O Vanilla Instant Pudding and Pie Filling
- 4 eggs
- 1/2 cup cold water
- 1/2 cup cooking oil
- 1/2 cup Bacardi Amber or 1873 rum
- Glaze:
- 1/4 lb. butter
- 1/4 cup water
- 1 cup granulated sugar

SOUTHERN FRIED CHICKEN

- 10 pieces bone in, skin on chicken (I used all legs tonight)
- 2 C. all purpose flour
- 1 tsp. salt

- 1/4 C. heavy cream or milk (I used heavy cream)

- 3 tablespoons of olive oil
- 2 onions, diced

- 1 28 ounces can of crushed tomatoes
