- 3/4 cup crushed seasoned croutons or breadcrumbs
- 1/4 cup chopped sweet onion
- 1 egg, lightly beaten
- 2 cloves garlic, chopped
- 3 tablespoons Worcestershire sauce
- 1 tablespoon prepared yellow mustard
- 1 teaspoon red pepper flakes
- 1/4 jalapeno pepper, minced
- ~ 1/4 cup fresh cilantro, finely chopped
- ~1/2 cup spinach, finely chopped
- 1 teaspoon extra virgin olive oil
- 1 tablespoon butter

- Sauce:

- Meringue cake:
- 4 large egg whites
- 1 cup superfine or castor sugar
- 1 tsp white vinegar
- 1/2 tbsp cornstarch (corn flour)
- Topping:
- 1 cup heavy whipping cream
- 11/2 tbsp granulated white sugar
- 1/2 tsp pure vanilla extract
- Fresh fruit - kiwi, strawberries, raspberries, blackberries, passion fruit, peaches, pineapple or other fruit of your choice
