Never-fail Pastry

Mix together flour and salt in a large mixing bowl
- 5 cups all-purpose flour
- 1 lb cold lard (Crisco or any shortening)
- 2 tsp salt
- 1 egg
- 11/2 tbsp vinegar (optional)
- Cold water
Raspberry Coulis

Makes about 1 cup
- 2 1/4 cups fresh or frozen raspberries
- 3/4 cup sugar
- 1/2 cup water
Ultimate Chocolate Chip Cookies

Preheat oven to 375 F (190 C)
- 3/4 cup shortening or margarine, softened
- 1 1/4 cups lightly packed brown sugar
- 1 egg
- 2 tbsp milk
- 2 tsp vanilla
- 1 1/2 cups all-purpose flour
- 1 tsp salt
- 3/4 tsp baking soda
- 1 cup semi-sweet chocolate chips
- 1 cup coarsely chopped pecans*
- *omit pecans and replace with 1/2 cup chocolate chips if desired.
Chocolate Mousse

Put the chocolate and butter in a heatproof bowl and place over a saucepan containing about 1-inch of barely simmer...
- 6 ounces semisweet baking chocolate, chopped
- 3 tablespoons unsalted butter, at room temperature
- 3 large eggs, separated
- 1/2 teaspoon cream of tartar
- 1/4 cup plus 2 tablespoons sugar
- 1/2 cup heavy cream, cold
- 1/2 teaspoon vanilla extract
- Whipped cream and chocolate shavings, for garnish
Soup - Chicken Noodle (Super Easy)

In a large pot over medium heat, melt butter
- 1 tbs butter
- 1/2 cup chopped onion
- 1/2 cup chopped celery
- 4 (14.5 ounce) cans chicken broth
- 1 (14.5 ounce) can vegetable broth
- 1/2 pound chopped cooked chicken breast
- 1 1/2 cups egg noodles (I use shells and small noodles)
- 1 cup sliced carrots
- 1/2 teaspoon dried basil
- 1/2 teaspoon dried oregano
- salt and pepper to taste

- 2 tsp vanilla extract (or desired flavoring- such as almond)

Combine the first 3 ingredients in a gallon-size ziploc bag, shake it up and then add the salmon
- 1/4 cup pure maple syrup or honey
- 1/4 cup soy sauce
- 2-3 cloves minced garlic
- 12 ounces fresh or thawed salmon
Nath's Pork Filet with Mushrooms

Rub garlic clove on both sides of pork filet
- 1 filet of pork
- 1 clove of garlic
- paprika
- 2 tbsp butter
- 1 cup sliced mushrooms
- 3 tbsp lemon juice or white wine
- 1/2 tsp marjoram or sage
- salt and pepper to taste
- 1 tbsp flour
- 1/2 cup light cream
Roasted Butternut Squash Soup

Preheat the oven to 425 degrees Fahrenheit and line a rimmed baking sheet with parchment paper
- 1 large butternut squash (about 3 pounds), halved vertically and seeded
- 1 tablespoon olive oil, plus more for drizzling
- 1/2 cup chopped shallot (about 1 large shallot bulb)
- 1 teaspoon salt
- 4 garlic cloves, pressed or minced
- 1 teaspoon maple syrup
- 1/8 teaspoon ground nutmeg
- Freshly ground black pepper, to taste
- Up to 4 cups (32 ounces) vegetable broth
- 1 to 2 tablespoons butter, to taste (substitute olive oil for dairy free/vegan soup)
