Preheat the oven to 325 degrees F
- 1 1/2 pounds ground lamb or chicken
- Salt and freshly ground black pepper
- 1 small onion, peeled
- 4 cloves garlic, finely chopped
- 2/3 cup panko bread crumbs
- 2 tablespoons extra-virgin olive oil
- 1 large egg, beaten
- 2 lemons, zested and juiced
- 1/4 cup pitted, finely chopped green olives
- 1 tablespoon ground cumin, a scant palmful

- A handful flat-leaf parsley, finely chopped
