- 2 (6-oz.) packages fresh baby spinach
- 1 tablespoon butter
- 1 (8-oz.) package 1/3-less-fat cream cheese
- 1 garlic clove, chopped
- 1 (14-oz.) can artichoke hearts, drained and chopped
- 1/2 cup light sour cream
- 1/2 cup shredded part-skim mozzarella cheese, divided
- Fresh pita wedges or baked pita chips

Classic Potato Salad

- 3 large Yukon gold potatoes peeled and cut into 1 inch cubes
- 3 large eggs
- 1/2 cup diced onion
- 1/2 cup diced celery
- 2 tablespoons sweet relish
- 1 tablespoon Worcestershire sauce
- 1 teaspoon hot sauce
- Kosher salt and freshly ground pepper
- 1 cup mayonnaise
- 2 scallions, thinkly sliced
Grilled Lobster with Spicy Herbed Butter

- 4-5 lbs bones in beef short ribs, well trimmed

- 1/2 cup dry red wine
- 1/3 cup balsamic vinegar
- 1 3 inch sprig fresh rosemary

Combine the chicken, apple, celery, and onions in a medium bowl
- 2 cups diced cooked chicken
- 1 small tart apple, cored and diced (about 1 1/2 cups)
- 1/3 cup diced celery
- 1/4 cup diced red onion
- 3/4 cup mayonnaise
- 1 tablespoon fresh lemon juice
- 2 tablespoons chopped fresh tarragon leaves
- 1 tablespoon chopped fresh parsley leaves
- 1 tablespoon chopped fresh chives
- 1/4 teaspoon kosher salt
- 1/4 teaspoon freshly ground black pepper
- 1/3 cup lightly salted, roasted cashews, roughly chopped
- 4 cups arugula, washed and dried

Maple and Soy Glazed Flank Steak
