Mezzi Rigatoni with Corn and Sausage

1. Bring a large pot of salted water to a boil over medium-high heat
- 1 pound mezzi rigatoni pasta
- 2 tablespoons extra virgin olive oil
- 3/4 pound spicy Italian sausage (about 4 links), casings removed
- 2 shallots, diced
- 2 cups frozen corn, thawed
- 1/2 teaspoon kosher salt
- 8 ounces mascarpone, at room temperature
- 1 tablespoon Calabrian chili paste
- 1 cup freshly grated Parmigiano Reggiano
- 1/4 cup basil leaves, chopped
Buttermilk-Cornmeal Fried Chicken

In a large bowl, stir together the buttermilk and Tabasco
- 2 cups buttermilk
- 1 teaspoon Tabasco or other hot-pepper sauce
- 1 chicken, about 3 1/2 pounds, cut into 8 serving pieces
- 1 cup yellow cornmeal
- 1 cup all-purpose flour
- 1 teaspoon salt
- 1 teaspoon freshly ground pepper
- 1 teaspoon chopped fresh sage
- 1/2 teaspoon paprika
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 2 cups solid vegetable shortening
Fried Brie

Heat oil in skillet over medium heat
- 1 lb Brie, cut into 2 wedges
- 1 egg, lightly beaten
- 1 C fresh breadcrumbs
- 3 Tbl olive oil
- Toasted almonds
- Crackers or French-style bread
Baked Potato

Heat oven to 350 degrees and position racks in top and bottom thirds
- 1 large russet potato (If it looks like Mr. Potato Head®, you've got the right one.)
- Canola oil to coat

Potato Salad

Boil potatoes, then cube (with skins on)
- 5 lb Yukon Gold potatoes
- 3 Tbl Dijon Mustard
- 1/4 C olive oil
- 2 Tbl red wine vinegar
- 2 Tbl minced shallot
- 2 Tbl fresh thyme, minced
- 2 Tbl minced Parsley
- Arugula
- Sliced red onion
Requeijao (Brazilian Cream Cheese)

1.Start by dissolving the corn starch in the milk
- 4 C milk
- 1 C corn starch
- 2 C grated good quality Parmesan cheese
- 2.5 C shredded mozzarella
- 3 Tbl unsalted butter
- 1.5-2 C heavy cream
- salt to taste
Almond Pancakes with Dried Cherries

Preheat oven to 200 degrees
- 4 eggs
- 2 C whole milk
- 6 Tbl unsalted butter, melted
- 1/2 tsp almond extract
- 3 C all purpose flour
- 1 (7-8 oz pkg) almond paste, crumbled
- 4 tsp baking powder
- 1/2 tsp salt
- 1-1/2 C dried cherries

- special equipment:
- 2 tablespoons kosher salt, divided
- 2 teaspoons plus 1 tablespoon freshly ground black pepper
- 1 1/2 teaspoons paprika
- 3/4 teaspoon cayenne pepper
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1 3–4-lb. chicken (not kosher), cut into 10 pieces, backbone and wing tips removed
- 1 cup buttermilk
- 1 large egg
- 3 cups all-purpose flour
- 1 tablespoon cornstarch
- Peanut oil (for frying)
