Pasta all'Amatriciana

Purée tomatoes with juices in a blender; set aside
- 2 28-ounce cans whole peeled tomatoes
- 1 medium onion, finely chopped
- 4 ounces guanciale (salt-cured pork jowl), finely chopped
- 4 ounces pancetta (Italian bacon), finely chopped
- 1/4 cup olive oil
- 1 teaspoon crushed red pepper flakes
- 1/4 cup tomato paste
- 1 cup dry white wine
- 1 teaspoon sugar (optional)
- Kosher salt, freshly ground pepper
- 1 pound penne or other tube-shaped pasta
- Finely grated Pecorino or Parmesan
Crispy Salt and Vinegar Potatoes

Combine potatoes, 1 cup vinegar, and 1 Tbsp
- 2 pounds baby Yukon Gold potatoes, halved, quartered if large
- 1 cup plus 2 Tbsp. distilled white vinegar
- 1 tablespoon kosher salt, plus more
- 2 tablespoons unsalted butter
- Freshly ground black pepper
- 2 tablespoons chopped fresh chives
- Flaky sea salt (such as Maldon)
Pumpkin Doughnuts (or Muffins)

Preheat oven to 350 degrees
- 1/2 cup vegetable oil
- 3 large eggs
- 1 1/2 cups granulated sugar
- 1 1/2 cups pumpkin purée (canned pumpkin)
- 1 1/2 teaspoons pumpkin pie spice, or 3/4 teaspoon ground cinnamon plus a heaping 1/4 teaspoon each ground nutmeg and ground ginger
- 1 1/2 teaspoons salt
- 1 1/2 teaspoons baking powder
- 1 3/4 cups + 2 tablespoons (8 ounces) all purpose flour
Chocolate Fondue

Bring cream and honey to simmer in heavy medium aucepan
- 6 Tbl heavy whipping cream
- 3 Tbl honey
- 2-3.5 oz bars Toblerone chocolate
- 1 Tbl Kirsch (cherry brandy)
- 1/4 tsp almond extract
- Assorted dippers (fruit, pound cake, almond cookies, butter cookies, etc.)
Tomato Basil Soup

Put all in crockpot and cook for 2 hours on medium heat
- Equal cans (106 oz) Crushed Tomatoes and Tomato Sauce
- 1/2 gallon Heavy Cream
- 1 cup sugar
- Minced garlic (I use at least a couple heaping spoonfuls, but to taste)
- About half a jar of chicken bouillon (Costco)
- Fresh basil chopped. (I use a couple of the small packages)
- Sauteed onion (most or all of small onion)
- Oregano, salt, pepper to taste

- 1 pound puff pastry, thawed, if frozen
- 3/4 cup granulated sugar, plus more for rolling
- 6 tablespoons cornstarch
- Pinch of coarse salt
- 3 cups whole milk
- 6 large egg yolks
- 3 tablespoons plus 1 1/2 cups (3 sticks) unsalted butter, room temperature
- 1 vanilla bean, split lengthwise and seeds scraped
- Confectioners' sugar, for dusting
Penne with Kale, Sausage and Lemon Cream Sauce

Heat oil in 6-quart saucepan over medium-high heat
- 1/4 C olive oil
- 4 cloves garlic, finely chopped
- 1 small onion, finely chopped
- 1 tsp crushed red chile flakes
- 1 pound sweet Italian sausage, casing removed
- 1 bunch kale, stemmed and rouhly chopped
- 2.5 C half and half, warmed in separate pot
- 1/3 C Parmesan, grated
- juice and zest of 1 lemon
- freshly grated nutmeg, to taste
- kosher salt and freshly ground black pepper, to taste
- 1 pound penne
- 3 Tbl finely chopped parsley, for garnish
Green Onion Risotto

Bring broth to simmer in medium saucepan over medium heat
- 4 cups (or more) low-salt chicken broth
- 2 tablespoons (1/4 stick) butter
- 1 bunch green onions, white parts finely chopped, green parts thinly sliced
- 1 cup arborio or medium-grain rice
- 1/2 cup dry white wine
- 1/4 cup freshly grated Parmesan cheese
- 2 tablespoons mascarpone cheese or whipping cream
- 1 teaspoon finely grated orange peel
Souffleed Banana Pancake

Preheat an oven to 375°F
- 6 Tbs. (3⁄4 stick) unsalted butter
- 3 Tbs. firmly packed light brown sugar
- 2 bananas, peeled and cut diagonally 1⁄4 inch
- thick
- 4 eggs, separated
- 2 ⁄3 cup milk
- 1 1⁄4 tsp. vanilla extract
- 1 Tbs. dark rum
- 1 tsp. salt
- 2 ⁄3 cup all-purpose flour
- 2 ⁄3 cup banana puree (about 2 bananas)
- 1 ⁄4 cup granulated sugar
- 1 ⁄2 cup pecan halves, lightly toasted
- Confectioners' sugar for dusting
Beer-Braised Chicken

Barbecue Sauce: Heat olive oil in large saucepan over medium-high heat
- Barbecue sauce:
- 2 Tbl olive oil
- 4 cloves garlic, minced
- 1.25 C hoisin sauce
- 1 tsp chilli powder
- 1/4 C low sodium soy sauce
- 1 C Amber Lager
- For chicken:
- 2 Tbl canola oil
- 3 boneless, skinless chicken breasts
- 1/2 tsp salt
- 1.5 C Amber Lager
- 1/2 C chicken broth
