ERIN'S SALAD

Mixed greens- wash, spin dry and refrigerate in covered bowl (saran wrap), Thinly slice red onion and refrigerate

- Red onion
- Asiago cheese
- Avocado
- Cashews
- Berry mix (Stone Ridge Orchards - dry, sweetened mixed berries- (available at Costco)
- Renee's poppy salad dressing
CHEESE TART

Roll out puff pastry to fit a large tart pan (fit the pastry up the sides)
- 8 oz puff pastry
- 1/4 cup butter
- 1/2 onion, chopped
- 1/2 red pepper, chopped
- 1/2 yellow pepper, chopped
- 1/2 cup each of blanched, chopped green beans and asparagus
- 3 eggs
- 1/3 cup of 1/2 & 1/2
- roma tomatoes, sliced
- 1/2 tsp fresh thyme, chopped
- salt and pepper, to taste
- 1/2 cup Cheddar cheese
- 1/4 cup crumbled Chevre
POTATO GRATIN WITH SWISS CHEESE

Preheat oven to 400F. Place one-third of the potatoes in a buttered 9" or 10" square baking dish
- 5 large potatoes, peeled and thinly sliced
- 1 tbsp fresh chopped dill
- 2 cups Swiss (or Gruyere) cheese, grated
- 1 cup cream or milk
- 1 cup chicken stock
- 1/3 cup Dijon mustard
PUFFED WHEAT SQUARES

Place all ingredients, except puffed wheat, into large saucepan
- 1/3 cup butter
- 1/2 cup syrup
- 1 cup brownn sugar
- 2 tbsp cocoa
- 1 tsp vanilla
- 8 cups puffed wheat
SQUASH MOZZA-GHETTI

- 1 medium spaghetti squash
- 2 cups (500 mL) Italian tomatoes, seeded and diced
- 1/4 cup (60 mL) pine nuts
- 1/2 cup (125 mL) dried Chorizo, diced
- 3 cloves garlic, chopped
- 2 tbsp (30 mL) fresh basil, chopped
- Salt and freshly ground pepper
- 6 oz (180 g) Tre Stelle Mozzarella, sliced
SPICY BAKED FISH

Combine all ingredients except cod fillets
- 1 cup mild or medium salsa
- 1 green onion, sliced
- 1/3 cup chopped green pepper
- 2 tbsp chopped fresh parsley
- 1 tbsp red wine vinegar
- Dash pepper
- 1 lb cod fillets
SALMON WITH RIVERS INLET CLASSIC MARINADE

- 6 cloves garlic, crushed
- 1 tablespoon ginger
- 1 cup soy sauce
- 1/4 cup olive oil
- 1/2 cup brown sugar
- 1 lemon
- Fresh ground pepper, to taste
- 2 ounces Canadian rye whiskey
- Splash Tabasco hot sauce
SHELLACKED BALSAMIC PECANS

- 2 cups lightly toasted pecan halves
- 1/2 cup firmly packed brown sugar
- 1/3 cup balsamic vinegar
- 1/2 teaspoon kosher salt
- 1/4 teaspoon chili powder or cayenne pepper (optional)
TAPENADE SWIRLS

- 1 cup store-bought tapenade
- 1 cup chopped sun-dried tomatoes (drained if in oil)
- 1 sheet store-bought frozen puff pastry, defrosted but still cold
- Coarse sea salt
LEMON HERB GRILLED STEAK

Combine all ingredents except steak in a double plastic bag
- 1/4 cup (50 ml) olive oil
- 3 tbsp (40 ml) fresh lemon juice
- 2 tbsp (25 ml) dry white wine
- 1 tbsp (15 ml) rosemary, crumbled
- 1 1/2 tsp (7 ml) thyme, crumbled
- 1/4 tsp (1 ml) sugar
- 1/4 tsp (1 ml) salt
- 1/4 tsp (1 ml) freshly ground pepper
- 1 1/4 lb. (0.625 kg) sirloin steak, 1 inch (2.5 cm) thick
