SHRIMP FLORENTINE RISOTTO

Heat oil in 12" skillet over medium-high heat
- 1 tbsp olive oil
- 1 small red bell pepper, chopped (1/2 cup)
- 2 medium green onions, sliced (2 tbsp)
- 1 clove garlic, minced
- 1 1/2 cups arborio rice (8 oz)
- 2 tsp fresh chopped dill
- 1 tsp grated lemon peel
- 1/2 tsp salt
- 1 can (14 oz) chicken broth
- 1 cup water
- 2 cups shredded spinach
- 1 pkge (8 oz) frozen cooked medium shrimp (1 1/2 cups), thawed and tails removed
- 1/4 cup grated Parmesan cheese

- Baguettes, cut diagonally to make 20 to 25 1/2" slices, toasted
- 2/3 cup good olive oil, divided
- 6 oz feta, crumbled
- 2 oz cream cheese, at room temperature
- 2 tbsp freshly squeezed lemon juice
- Kosher salt and freshly ground black pepper
- 2 tbsp minced shallots
- 1 garlic clove, minced
- 2 tbsp red wine vinegar
- 2 lb ripe heirloom or cherry tomatoes, in 1/2" dice (red & yellow)
- 3 tbsp julienned fresh basil leaves, plus extra for serving
- 2 tbsp toasted pine nuts
BRIE & PECAN SCOOPS BITES

Fill Scoops with brie. Top with apricot jam
- 1 wedge brie
- 1 jar apricot jam
- 1 handful pecans, chopped
- 1 bag Scoops tortilla chips
GOAT CHEESE & CHERRY CAPRESE

Core and slice any large tomatoes, reserving juices
- 1 1/2 lbs assorted heirloom tomatoes (or cherry tomatoes)
- 8 oz fresh goat cheese
- 1 cup fresh tart cherries, pitted and cut into halves
- 1 cup packed fresh basil leaves, torn
- 6 tbsp extra virgin olive oil
- 2 tbsp Champagne vinegar
- 3/4 tsp flaky sea salt
HERB-MARINATED VEGGIES

In a large bowl, whisk together first eight ingredients (through salt)
- 3 tbsp dry white wine, such as Pinot Grigio or Sauvignon Blanc
- 2 tbsp snipped fresh basil
- 1 tbsp snipped fresh parsley
- 1 tbsp olive oil
- 2 tsp snipped fresh thyme or oregano
- 2 tsp Dijon mustard
- 1 clove garlic, minced
- 1/4 tsp salt
- 1 1/2 cups small cremini mushrooms
- 1 cup grape tomatoes
- 1 cup yellow and/or orange sweet pepper strips
- 1 small zucchini, quartered lengthwise and cut into 1" pieces (about 1 cup)
TURKEY BREAST ORIENTAL

Mix all ingredients (except turkey breast) and place in a plastic ziplock bag

- 1 tablespoon soy sauce
- 1 tablespoon Dijon mustard
- 2 cloves garlic, minced
- 1 tablespoon brown sugar
- 2 teaspoons curry paste
- 1 pound medium shrimp - peeled and deveined
QUESADILLAS WITH GOUDA

Coat a large frying pan with non-sticky spray
- 4 large tortillas,
- 1 large red onion diced
- 2 slices bacon diced
- 1 sweet red pepper diced
- 2 cups (500mL) grated Gouda, Edam or Mozzarella cheese
ASIAN CHICKEN WON TON SALAD

Tear clean lettuce into chunks and place in a large salad bowl
- Salad:
- 2 head romaine lettuce
- 3 chicken breasts, cooked and cubed or shredded
- Cherry tomatoes, halved
- 1 red onion, thinly sliced
- 1 cucumber, sliced
- 1 package won ton strips
- 1/2 cup toasted cashews
- Sweet Sesame Dressing:
- 2/3 cup rice vinegar
- 1 cup canola oil
- 2 tbsp sesame oil
- 2 cloves garlic, minced
- 1 tbsp ginger, finely chopped
- 1 tbsp fresh lime juice
- 2 tbsp soy sauce
- 1 tsp sugar
- 1 tsp dry mustard
- 4 tbsp sesame seeds
- 2 tbsp chopped fresh cilantro, optional
GRILLED BACON & FETA MINI PIZZAS
