GINGER SOY SALMON

Place salmon in a shallow dish
- 6 , 6-oz skin-on salmon fillets
- 1/4 cup soy sauce
- 2 tbsp chopped fresh mint
- 2 tbsp grated fresh ginger
- 2 tbsp rice vinegar
- 1 tbsp sesame oil
- Lemon wedges
CREAMY MASHED POTATOES

Saute onion and garlic in oil until tender, about five minutes; set aside
- 1/3 cup (75ml) chopped onion
- 2 cloves garlic, finely chopped
- 2 tbsp (25 ml) olive oil
- 6 cups (1.5 l) cubed peeled potatoes
- 1/2 cup (125 ml)sour cream
- 1/4 cup (50 ml) mayonnaise
- 1/4 cup (50 ml) whipping cream
- 2 tbsp (25 ml) butter
- 3/4 tsp (3 ml) salt
- 1/4 tsp (1 ml) freshly ground pepper
- 1/4 tsp (1 ml) freshly ground nutmeg

In a large bowl, combine 3 bottles chardonnay, 3/4 cup chilled Cointreau, 3/4 cup fresh orange juice, 6 tbsp brandy...

- 3/4 cup chilled Cointreau
- 3/4 cup fresh orange juice
- 6 tbsp brandy
- 6 tbsp lemon juice
- 3 tbsp superfine sugar
- 3 cups cut-up fruit such as oranges, peaches, nectarines, seedless grapes and strawberries.
BEEF TACOS WITH CORN SALSA

In non-stick skillet, heat oil over medium heat; cook onion, stirring occasionally, until softened, 4 to 5 minutes
- 1 tsp oil
- 3/4 cup chopped onion
- 1 clove garlic, minced
- 1 1/2 lbs extra-lean ground beef
- 2 tbsp tomato paste
- 1 tsp chili powder
- 1/4 tsp each salt and pepper
- 1 avocado, pitted, peeled and diced
- 1 cup frozen corn kernels, thawed
- 1/2 cu cherry tomatoes, quartered
- 1 green onion, sliced
- 1 tsp grated lime zest
- 1 tsp lime juice
- 8 - 6 " flour tortillas
- 1/4 cup sour cream
- 1/2 cup shredded Cheddar cheese
SKIERS' FRENCH TOAST

In small saucepan, combine corn syrup, butter and brown sugar and simmer until syrupy
- 2 tbsp corn syrup
- 1/2 cup butter
- 1 cup (or less) brown sugar
- 1 lost French bread, cut into thick slices
- 5 eggs
- 1 1/2 cups milk
- 1 tsp vanilla
- 1/4 tsp salt
- 1/2 cup pecans, chopped
BACON CREAM CHEESE STUFFED MUSHROOMS

In a small mixing bowl, beat cream cheese until smooth
- 8 oz package cream cheese, softened
- 1/2 cup bacon pieces
- 1 tbsp chopped green onion
- 2 tbsp shallots, chopped
- 1/3 cup grated Parmesan
- 1 lb whole fresh mushrooms, stems removed
ROASTED CAULIFLOWER WITH BROWNED BUTTER, HAZELNUTS & CAPERS

Position a rack in the centre of the oven and heat the oven to 400F
- 1 medium head cauliflower (about 2 lb)
- Kosher salt and freshly ground black pepper
- 1/2 cup mayonnaise
- 2 tsp Dijon mustard
- 1 1/2 tsp chopped fresh thyme
- 4 tbsp unsalted butter, cut into pieces
- 1/2 cup hazelnuts, toasted and chopped to the size of capers
- 2 tbsp nonpareil capers, drained and rinsed
- 1 tbsp fresh lemon juice
PULLED PORK ON A BUN

In a skillet, heat oil over medium heat
- 1 tablespoon (15 ml) vegetable oil
- 2 onions, finely chopped
- 6 garlic cloves, minced
- 1 tablespoon (15 ml) chili powder
- 1 teaspoon (5 ml) cracked black peppercorns
- 1 cup (250 ml) tomato based chili sauce (such as Heinz 57 chili sauce)
- 1 ⁄4 cup (50 ml) packed brown sugar
- 1 ⁄4 cup (50 ml) cider vinegar
- 1 tablespoon (15 ml) Worcestershire sauce
- 1 teaspoon (5 ml) liquid smoke
- 1 boneless pork shoulder, trimmed of excess fat, about 3 pounds (1.5 kg)
- Kaiser rolls or onion buns, halved and warmed
BEEF & SNOW PEA STIR-FRY WITH HOISIN SAUCE

This quick and delicious stir- fry makes a little meat go a long way
- 1 tbsp. (15 mL) vegetable oil
- 4 cloves garlic, minced
- 2 tbsp. (25 mL) finely grated fresh ginger
- 1 diced red bell pepper
- 1 bunch green onions, sliced into 2- inch (1 cm) lengths,
- 1/2 lb. (225 g) rib-eye steak, sliced into 1/2-inch (1 cm) strips
- 1/4 cup (60mL) hoisin sauce
- 1/2 cup (125 mL) orange juice
- 1 tbsp. (15 mL) soy sauce
- 2 cups (500 mL) snow peas, trimmed
- Kosher salt and freshly ground black pepper to taste
- Lemon juice to taste
- Cilantro leaves for garnish
