GINGER BEEF

Place ginger in a small bowl and cover with hot water; let stand for 5 minutes
- 1/4 cup (50 ml) finely chopped fresh ginger
- 1 tsp (5 ml) flour
- 2 tbsp (25 ml) oil
- 1 lb (0.5 kg) sirloin steak, thinly sliced
- 3 cloves garlic, finely chopped
- 2 tbsp (25 ml) soy sauce
- 1 tbsp (15 ml) hoisin sauce
- 1 tbsp (15 ml) sugar
- 1/4 tsp (1 ml) red pepper flakes
- 1/4 cup (50 ml) chopped fresh cilantro, optional
ORANGE & SOY-GLAZED SCALLOPS WITH COCONUT BASMATI RICE

Infused with the sweetness of coconut, basmati rice nestles sweet-and-sour glazed scallops
- 1 cup basmatic rice, rinsed
- 1 cut coconut milk
- 1/2 tsp each salt and pepper
- 1/4 cup chopped fresh cilantro
- 450 g jumbo scallops (20 to 40 count), patted dry
- 1 tbsp olive oil
- 1/2 cup orange juice
- 4 tsp sodium-reduced soy sauce
- 1/4 tsp grated fresh ginger
MAPLE BUTTER TARTS

Sour Cream Pastry: In bowl, whisk flour with salt
- Sour Cream Pastry:
- 3/4 cup packed brown sugar
- 1/2 cup maple syrup
- 1/3 cup butter, melted
- 2 eggs
- 1 tbsp cider vinegar
- 1/2 tsp salt
- 1/2 cup chopped walnuts
- 1/4 cup dried currants
- 1/4 cup golden raisins
- 1 1/4 cups flour
- 1/4 tsp salt
- 1/4 cup cold butter, cubed
- 1/4 cup cold lard, cubed
- 2 tbsp ice water
- 4 tsp sour cream
MARINATED RIB EYE STEAKS

In bowl, combine first 9 ingredients
- 1/3 cup hot water
- 3 tbsp finely chopped onion
- 2 tbsp red wine vinegar
- 2 tbsp olive oil
- 2 tbsp soy sauce
- 1 tsp beef bouillon granules
- 1 minced garlic clove
- 1/2 tsp paprika
- 1/2 tsp ground pepper
- 4 , 6 oz ribeye steaks
CRANBERRY SAUCE WITH ORANGE JUICE

In a medium saucepan, combine cranberries, 1/4 cup sugar, orange zest and orange juice
- 2 cups (500 mL) fresh or frozen cranberries
- 1/4 to 1/2 cup sugar
- Zest from 1/2 orange (or 1 long strip 4" x 1/2")
- 1/2 cup orange juice
- 1 tbsp Grand Marnier
BASIL BUTTER FOR STEAKS

Mix all ingredients with a fork
- 1 1/2 oz unsalted butter, room temperature
- 1 tsp fresh squeezed lime juice
- 1 tsp grated lime zest
- 2 tbsp chopped fresh basil
- 1/2 garlic clove, minced
- Salt and pepper to taste
BUTTER PIE CRUST

Put flour, sugar, and salt in a medium bowl and stir with fork to combine
- 1 1/3 cups unbleached flour
- 1 tsp. sugar
- 3/8 tsp. salt
- 8 tbsp cold unsalted butter, preferable European style, cut into 3/4" pieces
- 3 to 4 tbsp ice water
TURTLE COOKIES

- 12 oz Milk Chocolate or Semi Sweet Chocolate Chips
- 12 oz Butterscotch Chips
- 1 cup Peanuts
- 1 cup Walnuts
- 1 cup Rice Krispies
- 2 cups Dried Chow Mein Noodles (broken up)
GREEK STYLE FETA

Place cheese in centre of a piece of heavy-duty foil
- 1 slice feta cheese, 1" thick
- 1/4 tsp oregano
- 1/4 tsp red pepper flakes
- 1 tbsp olive oil
- 1 lemon wedge
- Baguette
MAI TAI'S
By jarren
Mix all ingredients together and pour into 4 long-stemmed glasses filled with ice
- 6 oz Light Rum
- 3 oz Dark Rum
- 2 oz Grand Marnier
- 2 oz Amaretto
- 12-16 oz pineapple juice
- 12-16 oz orange juice
- 2 oz fresh lemon juice
