- 3 tbsp (45ml) extra virgin olive oil

- 2 large garlic cloves, finely minced
- 1 medium onion, finely chopped
- 2 carrots, finely shredded
- 1/2 cup (125ml) finely chopped fresh basil
- 1/2 tsp(2ml) sea salt
- 1/2 cup (125ml) thinly sliced sun dried tomatoes
- 540 ml can organic chickpeas, drained
- 1 1/2 cups lightly packed baby spinach leaves washed thinly sliced
