Aquafaba Mozzarella [Vegan]

Mix the cashews and the aquafaba until smooth
- 1/2 cup cashews, soaked for at least two hours
- 1 cup aquafaba (liquid from a can of chickpeas)
- 1 teaspoon lemon juice
- 1 tablespoon nutritional yeast
- 1/2 teaspoon sea salt or Himalayan salt
- 5 tablespoons coconut oil
- 2 tablespoons cornstarch or tapioca starch
- 2 teaspoons agar agar

Great potato recipe for Thanksgiving
- 4 yellow-fleshed potatoes, (about 1-1/2 lbs/750 g)
- 2 sweet potatoes, (about 2 lbs/1 kg)
- 3 cloves garlic
- Salt
- 1 cup (250 mL) milk
- 1/2 tsp (2 mL) pepper
- 1/2 cup (125 mL) sour cream or
- plain Greek yogurt, divided
- 1/2 cup (125 mL) fresh whole wheat bread crumbs
- 1/2 cup (125 mL) shredded aged Cheddar or
- Swiss cheese
- 2 tbsp (30 mL) chopped fresh parsley
Tofu Cutlets Marsala

1. Preheat oven to 300°F
- 1/4 cup plus 2 teaspoons cornstarch, divided
- 1/4 cup all-purpose flour
- 1/4 teaspoon salt
- 1/4 teaspoon freshly ground pepper
- 1 14-ounce block extra-firm tofu, drained, rinsed and cut crosswise into eight 1/2-inch-thick slices
- 4 tablespoons extra-virgin olive oil, divided
- 2 large shallots, minced
- 1 teaspoon dried thyme
- 6 cups sliced cremini, or white mushrooms (about 10 ounces)
- 1/2 cup dry Marsala wine, (see Ingredient note)
- 1 cup vegetable broth, or reduced-sodium chicken broth
- 1 tablespoon tomato paste

Preheat oven to 350ºF. Line baking sheets with parchment paper
- 3 cups Nutri Flour Blend
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp ground cinnamon

- 1 (10 ounce) package chopped frozen broccoli, thawed
- 1 (6 ounce) package chicken flavored dry stuffing mix

- For the dough starter:
- 3/4 cup (3 1/3 ounces) all-purpose flour or bread flour
- 1/2 cup water
- 1/2 teaspoon active dry or instant yeast (or 2 tablespoons active sourdough starter)
- For the English muffin dough:
- 1 cup milk, whole or 2%
- 1 teaspoon active dry or instant yeast
- 2 tablespoons sugar
- 2 tablespoons unsalted butter, melted
- 1 teaspoon salt
- 3 to 3 1/4 cups (13 1/2 to 14 1/2 ounces) all-purpose flour or bread flour

- 1 large onion, chopped
- 4 garlic cloves, minced
- 3 tablespoons olive oil
- 3 tablespoons flour
- 2 tablespoons vinegar (apple cider or sherry)
- 1 tablespoon light brown sugar
- 2 tablespoons Dijon mustard
- 3 cups vegetable broth (homemade is preferred)
- 1/2 teaspoon ground cinnamon
- 2 large carrots, chopped
- 4 medium red potatoes, chopped (unpeeled)
- 1 cup frozen sweet peas
- 1 cup frozen sweet corn
- salt and pepper (to taste)
- For the Dumplings:
- 3 tblsp shortening or oi
- 1-1/2 cups all-purpose flour
- 2 tsp baking powder
- 3/4 tsp salt
- 3/4 cup soy milk
- 1 tblsp finely minced chives

- 400 g skinless chicken breast or thigh fillets, chopped into bite-sized
