Vegan Pancakes Made With Aquafaba Recipe

1. For the Dry Mix: Combine flour, baking powder, baking soda, and salt in a large bowl and whisk to combine
- For the Basic Dry Pancake Mix:
- 10 ounces all-purpose flour (about 2 cups; 280g)
- 2 teaspoons (8g) baking powder
- 1/2 teaspoon (3g) baking soda
- 1 teaspoon (4g) kosher salt
- For Each Batch of Pancakes:
- 4 tablespoons (60ml) liquid from 1 can of low-sodium chickpeas (reserve remaining liquid and chickpeas for another use)
- 4 tablespoons (60g) sugar
- 1 2/3 cups (about 14 ounces; 400ml) almond, rice, or soy milk
- 1/4 cup (60ml) vegetable oil, plus more for cooking
- 2 teaspoons (10ml) vanilla extract
- 2 teaspoons (3g) zest from 1 lemon
- 2 teaspoons (10ml) cider vinegar or distilled white vinegar
- Vegan butter substitute and maple syrup, for serving
Baked Apple Cinnamon Fritters (vegan)

Preheat to 375F (190C). Line a baking sheet with parchment paper
- Dry Ingredients:
- 1 1/3 Cups All-Purpose Flour
- 1/3 Cup Sugar
- 1 Teaspoons Baking Powder
- 1 Teaspoons Cinnamon
- 1/4 Teaspoon Salt
- Wet Ingredients:
- 1 1/4 Cup of Your Favourite Non-dairy Milk
- 1/8 Cup Light Oil (such as Vegetable or Canola)
- 1/8 Cup Lemon Juice
- 1/2 Teaspoon Vanilla Extract
- 2 Gala Apples, cored and sliced into 1/4" rings
- Topping Ingredients:
- 2 Tablespoon white sugar
- 1 teaspoon ground cinnamon
- 1 Tablespoons vegan butter, melted
Cheesecake Brownies

Preheat oven to 350°F (180°C)
- BROWNIE BATTER:
- 1 cup butter, melted
- 3/4 cup sugar
- 3/4 cup packed brown sugar
- 3/4 cup unsweetened cocoa powder
- 3 eggs
- 1 cup all purpose flour
- 1 1/2 tsp baking powder
- 2 tsp vanilla extract
- CHEESECAKE BATTER:
- 1 lb cream cheese, softened
- 1 cup sugar
- 1 tsp vanilla extract
- 2 eggs
Rustic Italian Corn Bread

Stir warm water, 1/2 cup bread flour, yeast, and sugar together in a bowl
- 1 cup warm water
- 1/2 cup bread flour
- 1 (.25 ounce) package active dry yeast
- 1/8 teaspoon white sugar
- 1/2 cup cornmeal
- 2 1/2 tablespoons olive oil
- 1 1/2 teaspoons salt
- 2 cups bread flour, or as needed
- 1 tablespoon cornmeal, or as needed
Deli-Style Vegan Cream Cheese

Open and drain the tofu from it's water
- 1 240g package firm silken tofu (from the refrigerated section)
- 1 tbsp white wine vinegar
- 1 tbsp ume plum vinegar *
- 1 tsp fine sea salt
- 1/2 tsp garlic granules or garlic powder
- 2 tbsp minced white onion
- 2 tbsp minced or grated carrot
- 2 tbsp seeded and minced red bell pepper
- 2 tbsp seeded and minced cucumber
- Substitute for ume plum vinegar: 3/4 cup white rice vinegar plus 1/4 cup sugar plus 2 teaspoons salt.
Gluten-Free Vegan Quiche

1. Preheat the oven to 350 degrees F
- 1- 15-oz. pkg. extra firm tofu (drained)
- 1/4 c. nutritional yeast
- 1/4 c. cornstarch (or 1/4 c. arrowroot powder or 2 T. agar agar)
- 1 1/2 T. mustard powder
- 1 T. fresh-squeezed lemon juice
- 1 t. garlic powder
- 1 t. onion powder
- 1/2 t. turmeric
- 1/4 t. red pepper flakes
- 4 c. fresh spinach, chopped
Pasta and Cheese Dinner

A family favourite that combines vegetables for colour and flavour
- 4 cups scoobi do pasta
- 2 cups small broccoli florets
- 2 tblsp butter or margarine
- 1 small onion, finely chopped
- 1 clove garlic, minced
- 2 cups 2% milk
- 2 tblsp cornstarch
- 1-1/2 cups shredded cheddar cheese
- 1/2 cup shredded mozzarella cheese
- 1/4 tsp each salt and pepper
Baked Apple(or Strawberry) Rhubarb Cobbler

- Topping:
- 4 cups (1 L) chopped fresh or frozen rhubarb (about 1 lb/500 g)
- 2 cups (500 mL) diced peeled cooking apples or strawberries
- 1/4 cup (60 mL) liquid honey
- Grated zest of 1 orange or lemon
- 1 egg
- 1 cup (250 mL) milk
- 1/2 cup (125 mL) butter, melted
- 1/3 cup (75 mL) liquid honey
- 1/4 cup (60 mL) orange or lemon juice
- 1 1/2 cups (375 mL) whole wheat flour
- 1/2 cup (125 mL) chopped toasted walnuts or hazelnuts
- 1 tbsp (15 mL) baking powder
- 1/2 tsp (2 mL) baking soda
- 1/4 tsp (1 mL) salt

- 2 tbsp (30 mL) cocoa powder
- Pinch salt
