Smoked Salmon and Apple Carpaccio

Place an oven rack in the center of the oven
- 6 * 6 (1/4-inch thick) slices rosemary or olive bread, quartered
- 6 * 6 ounces Nova Scotia smoked salmon
- 1 * 1 small green apple, such as Granny Smith, halved and cut into very thin slices
- 1 * 1 tablespoon capers, rinsed and drained
- * Extra-virgin olive oil, for drizzling
- * Kosher salt and freshly ground black peppe
Crispy Rack of Lamb with Honey and Mascarpone

For the lamb: Place an oven rack in the center of the oven
- Sauce:
- 3 (1 to 1 1/2 pounds each) racks of lamb, trimmed, with 1/4-inch of fat left on meat
- 1/4 * 1/4 cup olive oil
- * Kosher salt and freshly ground black pepper
- 2 * 2 tablespoons herbs de Provence
- 1/2 * 1/2 cup creme fraiche
- 3 * 3 tablespoons honey
- 3/4 * 3/4 tablespoon ground cumin
- 2 * 2 tablespoons chopped fresh mint leaves
- 1/2 * 1/2 cup mascarpone cheese, at room temperature
- * Kosher salt and freshly ground black pepper
Braised Chicken with Pumpkin

For the Chicken: If you have time, liberally salt the chicken
- For the Chicken:
- 6 bone-in (skin-on) chicken thighs
- 2 tablespoons olive oil
- 2 cups thinly sliced red onions
- 2 cups large-diced peeled and seeded sugar pumpkin (reserve seeds)
- 4 garlic cloves (sliced)
- 1 1/2 cups apple cider
- 2 cups chicken stock
- 2 bay leaves
- 1-2 tablespoons chipotle powder
- 2 pounds collard greens (ribs removed and roughly chopped)
- kosher salt
- For the Pumpkin Seeds:
- 1/2 cup reserved pumpkin seeds
- rinsed
- 1 tablespoon olive oil
- 1 teaspoon chipotle powder
- 1 teaspoon salt
- Fresh cracked pepper to taste
Grilled Radicchio with Honey and Pickled Shallots

Preheat the grill to medium
- 4 * 4 medium shallots, peeled
- 5 * 5 tablespoons white wine vinegar
- 1 * 1 orange, juiced
- * Kosher salt and freshly ground black pepper
- 4 * 4 medium heads radicchio, trimmed of any outer "wilted" leaves, stem trimmed, halved, washed and dried
- 4 * 4 tablespoons extra-virgin olive oil
- 1/4 * 1/4 cup honey
Turkey or Chicken Pot Pie

- 2 * 2 tablespoons butter
- 1 * 1 onion, chopped
- 2 * 2 stalks celery, chopped
- 3 * 3 carrots, chopped
- 4 * 4 tablespoons flour
- 4 * 4 cups chicken or turkey stock
- 2 * 2 potatoes, peeled and diced
- 2 * 2 cups shredded turkey

Provencal Chicken Breasts with Rosemary Orzo

Pat chicken dry with paper towels and season with salt and pepper
- 3 whole boneless chicken breasts with skin (about 2 1/2 pounds), halved
- 2 tablespoons olive oil
- 1/2 cup dry white wine
- 2 large garlic cloves, minced
- white part of 4 leeks, halved lengthwise, sliced 1/4 inch thick crosswise, washed well, and drained
- 2 cups chicken broth
- a 28-to-32 ounce can whole tomatoes, drained and chopped
- 1 teaspoon freshly grated lemon or orange zest
- 1 cup drained Niçoise or Kalamata olives
Lobster, Crab or Shrimp Deviled Eggs

Mash egg yolks and mix with all other ingredients
- 6 Hard Boiled Eggs
- 4 Ounces Cooked Shell Fish
- 1 Teaspoon Dijon Mustard
- 1 Tablespoon Chopped Shallot
- 2 Tablespoons Mayonnaise
- 1 Tablespoon Chopped Capers
- 1 Tablespoon Chopped Chives
Shallot & Red Wine Sauce

Saute the shallots in the olive oil, add the garlic and rosemary until garlic is light golden brown
- 3 shallots , sliced
- 4 tbsp olive oil
- 1 garlic clove , lightly crushed sprig rosemary
- 5 tbsp balsamic vinegar
- 1-3/4 Cups red wine
- 1-3/4 Cups beef stock or brown chicken stock, preferably homemade
- 1-2 Tablespoons butter

- 1/2 * 1/2 teaspoon pure vanilla extract
- 3 1/4 * 3 1/4 cups cake flour
- 1/2 * 1/2 teaspoon baking soda
